Fairly new to the game, building up my mining guy in high sec but the idea of low/zero sec is alluring... I'm guessing, however, that I would have to make use of a wholly different loadout if I was to go down there? I tend to load my ship up on missiles/turrets and ignore such things as warp scramblers or all that other bits and pieces that I assume is more PvP based. Would I need to learn to use these in order to function in low/no sec?

There are countless games in the world. There are at least as many ppl that dont like one or more rules of said games. That never stopped smart game designers from creating good games.

Yes sir, you will need to learn how to use a scrambler and a web, orbit, transversal, guns in order to survive in low sec.
If you have the isk, best to get some t1 frigates with t1 setups, for cheapness sake, and go rat and explore low sec. If you are attacked by a T1 frigate in a belt, try to fight it. If anything else I'd say try and run. At least until you got a few T1 frigates kills.
If you are newby you will die often, but there are newby pirates too and they will die as well.
Learn a bit about the scanner too. Use it while in a belt or a planet. Once bad stuff shows up on scan, warp away.
Oh and, do not attack the pirates first, unless they are flashy. You will lose sec status.

It really does depend on what you mean by function. If you just want to move to these lower security areas and then avoid PvP combat, then you definitely wouldn't need to use warp disruptors/scramblers (as their only purpose is to prevent your enemy from warping away, which typically they'll only do if they're about to lose).
In terms of different fittings - agility boosting modules and/or warp core stabilisers will help you warp out before you can be warp scrambled, in some hostile situations. A MWD would be very useful too, as you may be able to simply outrun your opponent. But overall, it's not the modules that are going to save you - and certainly not if you fit one because someone on the forums told you to. What you really need is situational awareness, and an understanding of both the game mechanics of low-/null-sec combat, and a general 'feel' for it, in order to anticipate the moves of those who would hurt you and thwart their plans.
And there's a lot to learn. Actually pirating yourself in a cheap frigate is probably the best way to understand the ways that lowsec works, as you'll see it from both sides of the fence, and pick up mechanics such as gate guns, 60 second aggro timer, 30 second session change timer, docking radii of various stations, and how these relate to your survival or otherwise.
On the other hand, if you're just wanting to pass through in a frigate/shuttle (i.e. doing low-volume courier missions), I'll reiterate that you're essentially invincible. Nothing that can withstand gate gun fire can lock a frigate before it warps, so if you're manually going gate to gate to station you should not run into any problems at all. (The tiny caveat is the rare situation of smartbombing battleships, which can be avoided by warping to the destination gate from a different object than the gate you just came through.)

Some really good advice here. Thankyou.
The main draw would be mining in my new Osprey but by the sounds of it gate camps would eat anything large that tried to go through without backup. I have my home base which is about 4 jumps from 0.0 but the universe map warns me of about 11 ships being killed in the last 24 hours... Definitely makes me think twice before heading through there!
Cheap frigate exploration sounds fun though. I have about 20m ISK on me and I'm fairly good at mining now. I suppose I could have patience but I want MOAR! ;)

Just explore. I built 10 identical frigates with the intention of learning a lot and losing them all. So far I've still got five of them and while I have learned a ton, it is getting hard to lose them.

If you plan on mining in lowsec, then try to get your hands on some gravimetric exploration sites. Otherwise, you're out in the open (vulnerable) and the ore is **** (Not really any better than hisec).
0.0 has the best ore, but it's pretty vigorously guarded by the alliances. The Providence region, however, is friendly to neutrals so you can always mine there.
