Basically, if you find an abandoned ship (one with no one in it) you can board it, you do this by right-clicking the ship and selecting board. You transfer from your old ship to the new one, and your old ship is now abandoned. Note you have to be relatively close to the empty ship to do this.
Obviously, the best ship to use for getting to an empty ship is a shuttle or noobieship, so you dont leave a perfectly good and valuable ship floating empty in space.

Steps:
1. see a ship (it may have a character's name on it and look like a character but it will not be moving)
2.right click on it and look for the instruction 'board ship'. If it has this then it is unnatended.
3.Fly close to ship. 3km is enough.
4.right click and select the before mentioned 'board ship' option.
5. watch as your camera shifts to the new ship.
6. watch as your old ship now becomes able to be boarded by someone else.
7. Make sure you either blow up one (by self destruct) or return with a shuttle to pick it up.
8. blow up shuttle remotely (if owned by you you do not have to be present in ship to destruct it).
9. Collect insurance (fun bit).
Shuttles are worth 2000isk to self destruct, this is not much, but it is better than leaving them there to rot.
