Right now I'm using a Caldari Cruiser, the Osprey to do solo mining. She's a good old and tough girl, and has been a great choice as suggested by some of the player guides for solo mining.
Looking through the some of the player guides, I'm not too sure which would be the next ship to upgrade to from here. I thought I had read going to Barges or Freighters, but after looking at the amount of skills needed (and the prices of them, ye gods!), I'm wondering if there are ships in between that you all might recommend looking into, especially from your experience.

Barge is going to be the next one for you. I know you said you'd checked the various guides, but here's the "gold standard" for miners (now wikified):

If you are going the mining route your next step is to go to a mining barge and then to a hulk. Eventually you may want an orca but they are skill and ISK intensive. Mining barges shouldn't be too too tough for you to get into, from these it gets a bit harder. |

I just sat down and re-read Halada's Guide (it's good one), and saw where Battleship vs. Barge was discussed. I'm leaning towards Barge right now.
But while they are definately cheaper, I'm lacking in the skills areas, so I'd best get to training!

Remember there is no depreciation in eve. All that changes tech I prices is competition and mineral prices, which are reasonably stable at the moment *
So you could buy yourself a battleship to mine in till you can use a mining barge. Sell the battleship for what you paid for it and nothing lost.
Remember with caldari Cruiser level 5 the osprey has in effect 6 mining lasers. So the only caldari BS that is better than the osprey is the Rokh. Which is 150 million isk, or there abouts.
* Disclaimer: If the mineral market crashes you could be out of pocket. Check the last few months though, averages will be pretty consistantly level in minerals
