My brother and I just started playing the game. So far it seems pretty fun. We have died a couple times wondering into places we shouldn't go but we are noobs and that is to be expected. Right now we are mining to building up some cash flow which is also pretty fun in its own way.
We noticed that skills start taking a long time to train so we would like to plan out a few things so we don't waste too much time.
One goal we have is exploring the system. We know first hand how dangerous this can be with pirates and PvP.
What would be the best duo ship combo for exploring and surviving if we were to come across pirates or PvP?.
We also understand that some battles we are going to die but we would like to put up a good fight. The other battles we would like a good combo for fighting or just having the option to get away. Thank you for any input.

The best way to survive is to NOT get into a fight at all in the first place.
A big part of EVE PvP is about "intel" : knowing where your enemies are, how strong they are, and deciding to engage only if you know you have a decent chance to win (or at least have your side come out better off than the other side). Once a battle starts, most of the time you already know who's going to win (if you have a bit of experience in that sort of thing).
Of course, if you're into PvP, then your best chances are to team up with other people with the same tastes. Also, PvP plus mining don't really mix all that well... PvP and combat missions, now that's more like it. Sure, PvP fits are quite different from PvE fits (you don't need scramblers for NPCs, for starters, and webs are a lot less important, also firepower and speed is much more important in PvP fits), but they're much closer together than PvP and mining fits (heck, most of the time, you won't even use the same ships, let alone even remotely similar fits).

A common question, with never a common answer.
But my suggestion just in general, get into frigates and keep trying to get better and better at frigates. Better guns, better tanking. Fight smart, pick your targets. There is a lot to learn. This game is a marathon, not a sprint.

blackbird + ___________ <-- (DPS)
Just remember to kill the drones first. Warp out if you see a blob incoming. Insure them.

As soon as you can, start looking for a player corp. Bounce around a couple until you find exactly what you want.

A blackbird with ECM and a DPS ship with a warp disruptor is fairly straight forward.
You can PvP quite well with only a little SP but in order to do so you really need to learn the mechanics of the game and become familiar with how people play it. Most of the time is spent preparing for the kill and avoiding danger.

Caldari got a few interesting ships. The Kestrel is a decent rocket ship, and the merlin is a decent "samll time pirate" ship. Caldari also got teh Griffin that can use the games most potent ewar, ECM.
For me, also being Caldari, I started PvP in the Minmatar frigate Rifter. It is a great ship, but needs som cross skilling to use it as best as you can.
But a combination of a Griffin adn a Kestrel might get you good results if you want to attack others. Two Merlins might be fun as well.
The thing about Caldari is that they work best in numbers, and not alone, so only the two of you can be a bit hard, but in no way impossible.

First things first id recommend getting all your basic learning skills to 4 and get +3 implants this saves alot of time training and then maybe your advanced learning to 4 but thats up to you's as for the ships id recommend the Blackbird + Caracal/MOA combo, i have a blackbird that can permajam up battleships and doesnt need much sp and the caracal is a good missle boat and the moa is a gun boat depends which takes your fancy tbh.
This combo should get you and your brother off to a good start in the world of pvp and if you pick your targets right then you should get some nice kills.
