The Steak House grew out of the restaurant business in the 1950's. Going out for steak was considered the top tier of fine dining back then, even more so than French cooking....which is about all else there was.
In the 60's, several chains of "steak houses" were opened like Bonanza and The Sizzler, offering relatively cheap cuts really, cooked quickly on a grill right behind the ordering area.
In the 70s, a bunch of specialty "steak houses" opened up that offered much more of a higher end of cut, and introduced the idea of dry-aging the meat. These places are fairly expensive. In fact, for my graduation in '83, we ate at Ruth's Chris Steak House and the bill for 5 was around $300. In 1983. A fair proliferation of these outfits soon followed.
San Francisco has several of those, like Harris' and Alfred's...and other rather traditionally named outfits. No Sizzlers or Bonanzas though.
Around 2000, everyone suddenly discovered Kobe and Wagu beef from Japan, and their preparation methods...............and the race was on. You can get these unbelievably expensive meat preparations just about everywhere, offered as full on steaks or interesting appetizers, even in the sushi bars of course, where Wagu and Kobe Tartare became all the rage. Most of those "traditional steak houses" now offer these as well.
So.................yes, steak houses are a thing. Were a thing. I have not seen the cheaper places like Sizzler and Bonanza, but then I've lived only in major urban areas. I'm sure rural locales still have them in drove. But the rest of it has been caught up in the usual haute cuisine trends (which is fine), so it is a bit confusing about the state of "steak houses" and most indeed.
Food has just changed so much the past 30 years....I remember being shocked when my dad was more enthusiastic about getting Vietnamese Food after church rather than a cafeteria. Can't recommend Ruth's Chris...
We went there for a steak dinner and ordered a $72 steak (this was actually a good price for the cut, believe it or not). It was fantastic, for about one minute. They have this stupid gimmick of serving the steak on a 500 degree F plate. So yeah, it sizzles, and sounds great, but it also handily transitions the steak from mid-rare to medium in short order. They allow the steak to finish overcooking to ruin in front of you.
