Yes you can. I do it with on character with CCU4 and IPC4. I can stop running PI for a week and will not drop below 7 days of fuel.

You can also "switch" ships if you are being attacked, so if you mining and someone shoots at your hulk, you can switch to a drake in the ship bay while being shot at, you must however have an empty cargo hold.
