Is there a guide to mining missions similar to those for combat missions?
I'm not usually a miner (with or without a Heart of Gold ), but I've got a couple to do and was interested in a guide. Specifically, do they usually spawn rats (high sec) or is it just mine till you drop?

I've done level 1 thru 3 mining missions for Joint Harvesting. A few drones and rats might pop out on level 3's, nothing that can't be taken care of with light drones launched from a Hulk.
Mining missions consist of mining peculiar ores only the mining agent can give you access to. You must mine all roids to complete the mission, the most I've ever had to do is 6000m3.
You'd think there'd be other roids in the area to mine to pump up the Isk return for the mission, but no, nada, never.
The missions are repetitive, with only a few variations for each level. There is a mining mission section in the Eve Kill Mission Survival guides Linkage
Mining missions are rather tedious, but give a better corp standing boost than courier missions.

One thing to bear in mind is that mining missions seem to spawn mission specific rats and system specific rats (i.e. those you'd get when mining a regular belt). Every now and again you can end up with eight or so rats simultaneously from two different spawns. If you're in hi sec this isn't too bad as long as you have some drone skills, in low sec they can put quite a bit of hurt on an undertanked mining ship.

Mining missions are a bit odd. I accidentally accepted "Feeding the Giant" lvl 4 mission the other day. You need to mine 44800m3 and it's not really worth it and takes forever... BUT a True Sansha rat spawned (this was in high-sec) and it gave faction loot AND t2 salvage, which made up for it.

mining missions are kinda hard to do as a proffession as the mining agents are somewhat broken giving way too many hauling and combat missions, but I'll tell you what I've seen.
What you mine In lvl 1-3 it's just ore, with all the ore being variations of regular ore but they are named different cannot be refined or sold over market (they are sometimes sold via contracts). The equivelant ores you'll find in lvl 4's are arkonor, crokite, gneisis, dark ochre with the usual amount being around 45,000m3... can't remember the ores for the other lvl's but looks like that survival guide might have them. There are also ice mining missions (usually 20km3) and gas harvesting missions (4250m3). As has been said there's only the mission specific ore in these places and only the exact amount so all you gotta do is mine that roid (or roids as a few missions have multiple roids). Another trick is most of these missions will drop you 45/30km from the roid you want to mine and as hulks are slow as hell it's most likely quicker to bookmark the roid and warp out then back in (especially in ice installation as the first warp in drops you at 15km every over warp in after that will drop you at ~70km unless you warp to a bm).
What you fight most of the missions will spawn rats that seem to be the rats that you would get in that system at the belts so if your doing it in empire in a hulk with small shield booster you shouldn't have any problems. There are 2 exceptions to this however
Like drones to a cloud: gas harvesting mission with loads of drones, about 10 frigs and 5 cruisers by the time all is said and done but as this is a gas harvesting mission you will probably be flying a bs/command ship and shouldn't have problems.
Ice installation: somewhat screwy mission where you gotta mine loads of ice while drones & regular rats attack you, bring drones and fit a tank, there will be cruisers frigs and whatnot and as you will be in a mining barge (preferably a mackinaw) this is probably the hardest mining mission combat wise.

Yeah had this happen quite a few times, the rats seem to be what you would find in the belts in the system so there is a chance of faction frigate spawns... best i ever got from one of these was a low grade implant which was nice but it's pretty rare.
