Are you seriously comparing ships solely based on how many turret hardpoints they have?

Destroyers are small gun platforms whose role is to pop frigates quickly and efficiently.
Cruisers are a far more varied ship class. They can field bigger weapons than destroyers can, have more hit points, and generally more fitting options. |

What you are missing is variety. Cruisers account for all T1 Cruisers, each with different capabilities, strengths, and weaknesses, as well as all Recons, HACs, HICs, Tech 3s, Logistics... That is a LOT of ship power and capacity  |

1. Cruisers are bigger ships, with all the advantages that comes with that such as heftier Powergrid, CPU, Health etc etc. For example they use Medium Turrets rather than Small Turrets.
2. As mentioned, while there is just one Destroyer per Faction, there are three Cruisers each. A lot of variation and specialization there. |

Cruisers can fit bigger guns (that fire bigger shots) along with more support (non pew pew) modules.
Destroyers can fit more smaller guns and are intended as an anti-frigate platform. |

My DPS for my destroyer is 125. When I outfitted a cruiser, with medium turrets, it was 50.

You just lack the support skills for a cruiser sized hull. With good support skills, you will be able to dish a lot of dps out of a cruiser with a decent tank. On the other hand, you will never have a decent tank with a destroyer and your only job will be to pop the frigates but you will get destroyed by everything else. |

For the right job the Destroyer is a better choice, if you are cranking thru lvl 1 missions, ratting in hi-sec belts, ganking defenseless miners, salvaging or providing dps support for a frigate gang then the Destroyer is a fine choice. |

Well, support skills are skills that are generally good to have, so you won't find such skills that are suitable for cruisers only. Skills that give you % to powergrid, % to CPU, % to capacitor, and so forth, are useful to all ship classes. Makes it easier to fit all those modules you want. Also, "general purpose skills" you find in the gunnery category are crucial if you are to be successful in any ship bigger than a frigate class vessel. Basic skills from the engineering and mechanic categories are also important to train early on for new capsuleers.
The main point here, is that destroyers and frigates are less skill intensive (more viable out of the box) than other ships, so unless you have all those crucial support skills, moving in a straight path towards cruisers (plus the medium turrets skills obviously) and then jump right into one, will indeed feel like a major downgrade from a destroyer.
I learned that the hard way myself.

Energy management L4, Energy Systems operation L4, Drones L5, Scout drone op L4, Drone Interface L3, Combat Drone Operation L3, Hull Upgrades L4, Repair L4, Mechanic L4, Energy Grid Upgrades 4, Engineering L4, Electronics L4, Drone Navigation L3, Acceleration Control L3, Evasive Maneuvering L3, Fuel Conservation L3 (L4 or 5 if you do missions heavily), Drone Sharpshooting L3, Drone Durability 3, armor compensation skills to L2 or L3, Medium Hybrid L4, Gunnery L5, and L3 in Sharpshooting, controlled bursts, rapid fire, motion prediction, surgical strike, and trajectory analysis.

Then you should armor tank, so at least pick up "hull upgrades" and "repair systems" early on. Gallente are drones specialists (The Vexor cruiser gets bonuses to drones), so you should train for drones too. Anyhow, I would spend some time on those gunnery skills if I were you. Those are for general purpose, and are useful no matter what direction you want to go later on for which spaceships you want to fly.
Don't forget all those important navigation skills either.

Gallente is a very specific game play relying on drones to add dmg or main dmg, those are overall bad for pvp as main dps source. Blasters need you to get in range, after recent changes you can nok maintain respect distance provided you have TOP gunnery/drone/hull skills, support skills like fittings on TOP. Even then Eve being about 1 on 1 that turns in to 1 on 5 or + faster than you engage, gallente game play design is quite poor and offer few options compared with all other races. Railguns are horrible, tank in a Gallente set up is restrictive and demands hard core skills training witch in eve means over a year.
Gallente is about sneak attacking, pick targets you can easily blow and gtfo. If you have to use mwd's to move around while tanking, shooting T2 hulls, you'll feel the pain. It's some kind of space camper rogue but offers nothing else because of it's bad game design with current game mechanics.
If you have fun with go straight for all skills and get the 700 wooping dps you can get out or a catalyst. Yep you read it well, 700dps. Now once you've trained all those skills and figure out you're stuck in a single game play style restricting your gaming possibilities you'll train something else.
You're at the beginning, change ASAP, it's the best advice someone can give you. Go amarr/minmatar you can't go wrong with those 2 in any way. |

Which destroyer, and which cruiser?
If you're using one of the mining cruisers or some of the drone cruisers, there is no damage bonus for the guns. Potentially you're also using a different ammo type which stresses, say, range over damage. Perhaps you have more points in the small gun skill than the medium gun skill (5% to damage per level). Perhaps your destroyer is using close-range guns, which have higher damage multipliers than long-range ones.
This leaves aside the question of whether you're using damage mods of some kind, and drone DPS (destroyers mostly can't fit drones, the drones on most cruisers can add 100-200dps easy) and so on.
So, yeah, basically what you're missing is, well, every single mechanic in Eve.
Gallente-specific advice:
If you want to shoot things, make sure you're in a thorax using blasters initially, and train up your propulsion skills as well as your gun skills and armor tank so that you can drive up close enough to actually shoot things in the face with them.
If you just want to kill stuff and aren't that worried about how to do it, focus on the Vexor. Use railguns, go heavier on defense than on damage mods, and train drones to V _immediately_ so you can get 5 medium drones into space.
More generally, you don't _have_ to switch races, but generally speaking if you want to focus on guns Gallente is not going to be your strongest choice. Gallente has the shortest-range, highest damage guns in the game (blasters) and the longest-range, lowest-damage guns in the game (railguns) and there's sort of a big range gap in the middle that you have to fill in with either a lot of propulsion or drones. If you're a gun guy I'd go Amarr, as they have a much larger donut of damage application for both of their gun types and can sort of reliably hit without too much int he way of acrobatics. Minmatar is OK, but at some point you'll need to fill range gaps with missiles still. |

You do know that, apart from the myrmidon, every single gallente "drone" ship also has a damage bonus to hybrids, right?
Further, between the cruiser, BC, and BS hulls designed for direct combat, there are 8 drone boats (vexor/navy, domi/navy, ishtar, sin, myrm, eos), but 10 gun ships, not to mention several other ships with bonuses to hybrids but not drones, such as the celestis hulls. One thing to remember about destroyers is they are glass cannons. They can put out a lot of damage but they can't take it. Also their sig radius is bigger than most frigates so they are hit for more damage by cruiser class weapons. |

Of course. But Drone modules are high slots too. You generally won't get the same DPS out of your Turrets on a Gallente Droneboat than on a dedicated Turretboat, obviously. |

OP, you are making the assumption that DPS determines what ship you fly. This could not be further from the truth. You can take a low DPS high TANK ship and still kill someone with it.
Also, There is no way that a Catalyst is spitting more DPS than a Thorax. Unless you fail fitted the thorax... or only put 1 medium gun on it... My post was probably full of typos. I don;t care... |
