Hey, like most people (I guess), I'd rather have a main character who can do a lot of things rather than 3 characters who can only do a few things. But I also want to put the other two blank characters to good use.
I hear that some people just use them to scout and look at other markets, but what are some other ways to get some use out of themłeither for fun or for profit? Thanks.

Shrug, untrained characters can't do much. You've just about listed the possible uses if the characters aren't trained at all.
With a bit of training (depending on how much), you could also:
- set an alt up to be the CEO of your newly-formed corp, so that if you want to join some other corp with your main, your personal corp doesn't disappear.
- research alt, for some datacores.
- refinery / industrial hauler alt / ore thief
Actually, if you don't want to take time away from your main to train alts, you could purchase ready-made characters for ISK (see the forum below), and then use them. Hulk-capable mining characters are a popular choice, or some low-SP combat character you could use for PVP or just to mess around with a different set of ships.

Yeah, you could buy characters to fill the slots (like the one I have up for auction now, hint, hint). You can also do what I've done: train a specialist alt as a second account for six months, then transfer it to an empty slot of your main account.
Another use is to keep your money held by an alt; that's a good way to prevent yourself from wasting it on impulse shopping.
Or just do what most people do -- keep an unskilled alt in Jita for price checks and to troll the forums.

Seconding the research datacores character.
If you do any industrial stuff, another character to do your BPO research is useful also.

If you don't want to take off a lot of training time from your main: - hauler: only need industrial III really - trader: trading IV, retail IV and you're set - forum troll/spy/scout/scammer alt: no additional skills needed
You can also just buy characters on character bazaar and put them on those slots ... for variety. Whenever you get bored of playing with you main just relog and play on one of these alts.

CEO - just did about 3 days of skilling on him. Other Alt - currently up to about 18 days skilling. May be up to a month by the the time he is ready.

I would really rather not delete the first created character. Since having done the 'base camp' training missions he's a useful Alt.

If you join a player corp, having an alt in NPC corp to move stuff around is pretty essential for when you're war-dec'd. Myself, I have 2 accounts broken down like this:
2x cyno alts (for aid in moving my capital ships) - one does hauling as well 2x trade alts / scouts Main generalized pvp character Alt carrier / dread pilot

One thing that has bothered me lately is that my main has a lot of miscellaneous skills trained that I don't need day to day. All those skills make medical clones more expensive to buy. So if you are PVP'ing and want it to be as cheap as possible, don't train those not often used skills on your main.

It doesn't matter what order you create them in.
"Main" and "Alt" are terms loosely used in the game - they have not exact meaning. The Main is simply the character you use the most.
You don't even have to have a Main, you can just have alts which you use as needed. You may have one you use a lot for a while and then use another more.
Alts also refer to alternate accounts as well as alternate characters on the same account.
Use them anyway you want.
All that said, it takes a very long time to skill a character up to the point they can really make some money so you are usually better off concentrating on one character per account at a time.

The best use for an empty spot is a trading alt, takes only a few days to train and can make you lots of isk, if you like market trading.

You could make an extra throw away character to explore the depths of space, i.e. 0.0 in your rookie ship. Probably would die quite often, but at least you can say you have been in 0.0, and since it is just a throw away character, wouldn't matter much. =========================

Dispite my earlier post about my alts, I would have to agree with what Toshiro has said.
I didnt begin to train these alts untill i had my 'main' to a skill level where I was happy to pause skilling. The essence of my concern was that, as I understand it, some forums have a rule that you only post as your "main". And though as I saw it I was, neither Race nor Corp identifiers were showing up under my name and I was concerned if I was behaving myself properly.
I have now learned that there is an "Eve Forums : Settings" panel where you can set the "Default Character" as well as toggle various identifiers to be displayed or not on one's posts.

Personally I use one of the slots for an explorer to see various places. Rookie ship + No Implants + Default Skills = no problem if they die. You might get warp camped going into lowsec or 0.0 space, but just log off and do other things for a few hours. If they pod kill you, you lose nothing. Mostly they will tend to expect you to be a 'scout' for someone's more expensive ship and leave you alone in hopes of you thinking its safe. You're actually probably as safe as anything in this configuration, although in lowsec and below someone may pop you because they are bored or on some stupid attempt at blackmail. You can simply set the ISK amount for initiating a conversation to a ridiculous level and then laugh at them if they are stupid enough to pay it in an attempt to blackmail you. That's what I've used one of the slots for at least. Your milage may vary.
