I remember a lot of games and with good emulators being available I've looked back at a few and I definately remember them with rose tinted glasses, I couldn't get back into most of them.
That said, here goes in no particular order.

Well games from that era tended to focus completely on gameplay as even the moast awesome graphics(at that time) could be churned out in bucket loads by a couple of art students on the cheap. Nowadays the vast bulk of the budget goes to the graphics as it now takes teams of proffesional artists hundreds of man hours just to make a single complex animated art asset.

wow, thanks! Got immediately flashbacks from the past and must take few more rounds of this game again.
My earliest memories from games are though from Commodore 64 era and games like Last Ninja, Winter Games, Bruce Lee, Who Dares Wins and International Karate+ pops into mind.

If I could find a copy of that I'd be a happy man.
I was also a big fan of the Gabriel Knight/Kings Quest games from Sierra.
There was also this space combat game on the pc I played when I was a little kid. Can't remember the title for the life of me, but I remember thinking the graphics were WAY ahead of their time. This was like 17-18 years ago, but I loved being able to fly my spaceship around blowing **** up in archaic "3-d" graphics.
Text based RPG's on my dad's BBS when I was around 6 years old where the guy somewhere else in town would always kick my ass and make fun of me for sucking at the game.
Jet Fighter II
Wolfpack (something with WWII and naval combat, tons of fun for me)
All the games I could play when I was a kid by typing "B:\" 5" floppies ftw yeah? The one I remember in particular is one where you had to sail around the bermuda triangle trying to find someone who was lost or something like that, even if I don't remember what it was called.
Mordor: The Depths of Dejenol
Stars!
Castlevania: Symphony of the Night
I think anybody could go on and on and on and on and on....about their favorite games but I'll stop right there. The Full Throttle comment brought back some good memories of my childhood though...

You know i've been having this same problem. I think that like freelancer was the last good one (or even one of the only ones) i've seen in YEARS. Its like the genre just fell off the map. Anyone know any good recent space sims?

I even started to code a mix of Paradroid and Mail Order Monsters in C128 basic and even though I never finished it, I managed to get the part where you can buy a droid, equip it with stuff and move it around a bit. -------- Ideas for: Mining

Commander Keen, that series was awesome. I really wish ID would bring it back.
Deus Ex, this game was awesome. One of the best action-rpg style games I've played.
Fallout, "War, war never changes..."
Daggerfall, the first game from the elder scrolls series that I played (never got a change to play arena)
Castle Wolfenstien, I remember staying up really late with my dad playing this one
Dune 2, the first rts I played and sadly is unplayable by today's standards
