I'm sitting in .6 space minig a little Omber and turn my head to look at another computer for 30 seconds. When I look back I've got 6 NPC Rats close and closing on me.
So, is there some wide view scanner I can mount that could produce an audible alert for "things" I configure it to watch out for? I could have used a beep or squeek or a freaking RED ALERT tone when they warped into range.
Obviously watching the screen is part of playing the game but sometimes my eyes need to wander to a different display once in a while.

Not really, no. I would suggest working your way towards a better tank, which would give you more time to look back at the screen. Depending on how much money you put into it, its possible to permatank the NPCs so they just never kill you. ------

The closest I can think of is auto target back. It's a kludge but it serves the general purpose of what you want.
If you set your auto target back to 1 or more then the targetting noise will warn you that you're being attacked.

Not a bad idea! I like it. May have to do that when im gas mining in WH's. That way if for some crazy reason someone tries to gank me or a sleeper randomly shows up when its not supposed to, I will have a warning. Thanks Biff.

Put a few drones out, they will take care of the rats. I sometimes don't realize there were rats until I switch to my tab that shows wrecks.
5x T2 medium drones easily take care of groups of frigates and cruisers I find in level 4 ore and gas harvesting missions.

a t2 active sheild tank will tank any high sec belt spawns. Without any problems at all. Works for a lot of low sec and null sec too.

Null sec? Maybe crappy null-sec. I was in some -.6 to -.8 and I used a Pith B-type and invulns to take some triple bs spawns that worked 90% of the time

Why would you use invulns when you know what damagetype you're tanking?
