TL DR version: EVE is about you. Forget everything you learned about MMOs that you learned from WoW, you will enjoy EVE a whole lot more.
Wall of text version: You are looking at EvE from entirely the wrong perspective. EVE is not about what you can do for, say, the Minmatar Navy, they are doing quite well on their own and don't need the help of loose cannons like us pod pilots. Read up on the back story.
Instead EVE is about getting out there and making your own place, making your own name and making a difference within the player created aspects of the game. In other words, if you want to feel like you are making a difference you need to really get out and away from the NPC aspect of the game. Contributing mined resources to help build defences already exists, it is just within the player owned corp aspect of the game.
And when it comes to making a difference, well just think about WoW for a moment. No matter how many times you go and kill the Lich King he will still be there, tomorrow, the next day and in a year from now. Nothing will happen in the game, his minions will still be there and you have had absolutely zero impact on the outcome of the game.
In EVE however, because the game is focused around what the players do, you can make a difference. Just take a look at the recent fall of BOB and the repercussions of that little incident. Take a look at the dynamic play and counter play of NUll sec borders.

Too true, but hey, high sec mining it is pretty much money for nothing more than a little bit of time. You can give it minimal attention and go do other things, like watch a movie, do some homework, take a shower (face it, you are playing an MMO, you probably need it ). If you want mining to be interesting you can try some low and null sec ninja mining, some people get a bigger rush out of that than any amount of pew-pew style PvP.

Missions. Finally found a level 2 quality 10 agent. Good isk. Sometimes get blown up and have to spend LITERALLY 2 hours travelling around collecting the parts to set up another ship. Salvaging is boring as hell.
Plan ahead. No hearthstone, or similar means of instant back to base travel, means you really need to make sure you have everything you need at your current destination. This includes spare ships, modules and ammunition.

EVE's PvP is different, looking at it from the perspective of a level 80 character being better at PvP than a level 60 character, or a 2 year old character being better than a 6 month old character, or module/ship x is better than module/ship y, then you are pretty much going to lose in almost every PvP encounter in EVE no matter how well equipped you are.
Skills and equipment only make a small part of you success. You need a good mind for tactics and a belly full of fire to really do well in EVE's PvP. While I have a good mind for tactics, and a good 4 years of skill training, I still suck at PvP purely because my heart just isn't into that aspect of the game, I prefer the co-op constructive over the destructive aspects.
Not to mention PvP in EVE goes beyond the basic pew-pew vs pew-pew of space ship battles. You regularly see market warfare, political conflict, sabotage, bribery and a whole host of other things that make EVE what it is.
