All it enables them to do is view your skills, and you can change the key any time you like.

Giving someone your limited API key will give them access to a list of characters on your account, a list of their skills, and a list of their wallet totals. No actual information about the account (like login/password) is given through the API, even the full API.
The reason some corps ask for this is so they can see what your character is capable of (skill-wise), and to check to see if you're a lazy spy or some type of character they don't want to associate with (ie, you have a character on the same account that's in an enemy corp/alliance, or a -10.0 lowsec pirate or the like). ---

As for the reasons, it really depends. SN asks for an API check, for example, but only as a very basic anti-spy measure.
If you don't want them to see your info at any time in the future, just generate a new key.

that is the default api page, it explains some things about the api.
the short description for limited api is (although note it does show current wallet balance as well, although that might count as character sheet):
Limited Access API Key Allows access to character sheet and skill training information only. Use this for applications such as skill change notifiers. You're posting again!? Has it really been 5 mins?
