I normally do missions in a Thorax, but I decided to try the Taranis to see what it could do. My setup was:
3x Light Ion Blaster + Iridium, Nosferatu MWD, cap batter, cap recharger 3x Reactor Control Unit
I tried an easy level 2 mission which had 2 Serpentis Guards and 3 drug couriers. I tried orbiting the first guard at 500m which put me at about 1500m in practice with a transverse velocity of about 1000 m/s relative to all the NPCs.
I only had the first guard down to 50% before the serpentis started to cut into my hull and force me out. In general I was taking way more damage than expected.
I went back and got the Thorax.
What did I do wrong?

Use antimatter instead of iridium. Get rid of that capacitor crap and throw in some webbers. Also helps to have a dmg mod in the low, 2 if you can fit them. Use some light drones to help out too.

also try and fit an oversized ab instead they should land alot less hits on you

You have a lot of cap I see.
Are you actually using it at all or is it just always around 80%?
I would chip in a small repairer and a webifier, cap relay or two.
Also when orbiting them shut down the mwd, only burst it occasionally if you get into trouble. Orbiting at regular speed will let you gain more and better hits.

P.S. Watch out for some of the level 3 cruisers - they will web and scramble you.

10mn ab will allow you to go fast enough that they wont be able to hit you well. They fly slow so a web may or may not be optional, you just need to try it out. Small armor rep for sure.
So, given that grid/cpu works out I'd try
3x ions, nos (optional, fit this only if you have enough extra grid) 10mn ab, web (or maybe cap recharger) , cap recharger micro aux, micro aux or pdu (whichver you need) small armor rep

never ever ever use a 10mn ab on a interceptor, thats stupid, period.
use a micro aux powercore in low, with a damage mod and a small repairer, use a 1mn mwd in med along with a webber and a scrambler (or even 2 webbers to keep your npc enemies close and unable to go to their optimal range) and use 3 ions and a small nosferatu in high.
keep your mwn on manual and hit it when you need to get into or out of range.
and use antimatter.

Actually, for lvl 2 missions, as long as they werent missle users, I just approached each target and blasted it. This creates very little transversal velocity, allowing you to kill the ships in about 2-3 volleys. Put a small armor rep in low slot if you get in trouble. A web helps on some targets.
A 10Mn AB is almost ALWAYS the way to fit an inty VS NPCs, but in this setup you just use the MWD to get to range, then switch on the 1 Mn AB to quickly turn at each target.

whats stupid about running a 10mn ab on an interceptor is it uses up more than 90% of your powergrid, and makes your ship less offensive and less defensive at the same time.
all so you can RUN AWAY. thats all.
Droidster i use my taranis to kill all serpentis rats (bs spawns, cruiser spawns, all of it.) and im not telling you 10mn on interceptor suck to keep a big secret from you, its just that its stupid and pointless. i also have a warp scrambler fit for hunting npc, cause your all npc to me.
take a look at your sig radius vs your speed sometime when your using mwd, and ask yourself if an under 200m sig radius can be hit going 3500ms.

I don't necessarily find an MWD or a 10MN AB necessary. Been using named 1MN ABs instead on my intys and they are generally enough to handle lvl 3 mission spawns.
I suggest raising your int level higher to lower sig radius.
My suggested layout
3 light ions with antimatter
1 named 1mn AB 1 cap recharger 1 web or another cap recharger
1 tech 2 armor repairer one cap relay one kinetic hardener
Also it may not be a wise idea to play blaster against a faction that specializes on blasters like Serpentis. You're just playing against their strengths.
You might like to outrange them instead, use rails while orbiting at 5 to 10km, and perhaps using web to keep the target from moving for better hits.

rails suck. even with serpentis, only frigs hit you when you orbit (and the occasional flameburst missiles). But those aren't a problem to tank out using my loadout. Serpentis blasters act more like medium range railguns.
