Best bet is either a sensorboosted HAC, for example a Zealot, or a cloaked hic/dic somewhere around where you expect the bomber to engage from. They often use the same bookmarks, or at least attack from the same side, because they need a celestial in front of where they're facing to warp off quickly. Even taking the time to warp to a safespot instead of a celestial gives the defender a couple more seconds to kill the bomber. Bombers are slow aligners so if they're not directly aligned they will go down to alerted sniper HACs. I know because I've killed many bombers in that fasion.

Sit motionless at the jump bridge with the AB and DC running. As soon as the bomber appears on the overview, CTRL+doubleclick on it to start locking and approaching the target. He can't kill you with a bomb; it takes about 3 bombs. If he's not fitted with warp core stabs, you scramble him, close, rip him apart, and salvage the wreck. It can be done with all T1 fitting. Anyone try one of those /other/ interceptors... the useless ones (stiletto, malediction, ares/keres)?
As the SB's about 30km or less you can lay an overheated point on him before you start moving (if it can even lock that far). Then just AB on over and pick him off while he sits there and cries.
