Does anyone have any advice on what systems to find Hacking and/or Archaeology sites in? I've been scanning a lot, and I've found lots of hidden belts, wormholes, and complexes, but not one Hacking or Archaology site. I've mostly been in high sec, if that makes a difference.

All systems.
I'd advise against scanning on or right after weekends though, because more people will be on and scanning and running the sites you might otherwise find. Try scanning in out of the way places where there aren't many people

Try scanning out sites in less populated low sec areas and you may have more luck. You need to keep your wits about you so that people don't scan you out and kill you, but I find lots of stuff just on the edges of heavily populated high sec zones - even on the weekend.
Drop probes, cloak, scan, bookmark, then come back with a tanked cruiser to run them down.

as the two previous posters said .... worst place you can look for these sites, IMO, is in Caldari-land, worst time is at the weekend.
There are plenty of quiet low sec systems you can scan in or just head off to the boonies in high-sec if you don't feel comfortable about low sec. Low sec sites in quiet systems are "safe-ish" as you only need a cruiser to do them, warp to bookmark, tank any rats, grab the loot and bug out.

Pretty much echoing what the previous posters have said. I just want to add to that that profession sites respawn when they are completed, sometimes with a slight cooldown timer attached. It isn't attached to downtime. The place where it respawns is random, within a region. (The rules are a bit more complicated actually.) The result of this is that sites gets pushed out of the high population zones quickly, and often a lot of sites end up in a backwater system somewhere where you can get lucky and find maybe 10 different sites. Such a systems often happens to be in lowsec.
