Why do people use containers to mine. It seems to be a pain as a container takes up a full cargo hold on a miner and holds just as much so why do people use them

If you ejaculate an item from your cargohold, a container is produced in space with the item in it. This container holds 27,000m3 - but can be accessed by anyone.

Unless you're meaning secure cargo cans that people keep in their cargo, through haulers, in which the space is increased. For example , my Badger II , with 3 expanders , has ~9k hold , throw in 3 secure cans (taking 3k each) expands that space to ~10.7 (just rough figures)

First of all, never every try to ejaculate a container - not even a small secure one. It will hurt.
People mine into containers for a variety of reasons. In many cases it makes sense to jettison ore into a 27k m3 container and then pick up with an indy when it's getting full.
This is obviously a bit dangerous in .5 space or above because P4RN, Zeepo and other disgusting ore thieves will try to steal your ore.
That's why people use secure containers - which may be passwords protected.
Given that ore thieves rationale for stealing is 'to rid strippers from n00b belts' it's quite safe to mine into an open container in non-n00b belts - definitely my preferred method.
