I understand "kitting"...that would be the fitting you put on your ship. I understand what a kite is....a flying thing attached to a string that I played with as a child.
Could someone help me w/ what "Kiting" is, how it works, what kinds of ships do it and where it has a role in PvP/E

In EVE this is typically done with fast ships such as the Vagabond that can deal good damage at range while staying outside scram / web range of their opponents. You can basically kite the opponent around as you see fit while you kill him off slowly as you take very minimal damage.
The name comes from the kite as you mentioned. Imagine you are the personal controlling it and the hostile ship is the kite in the air. You can always control the position of the kite relative to yourself and how far away it is from you.
In EVE it also has another meaning which is related to POS warfare, it's mentioned on the wiki page. ___________________

Wrong analogy. The kite is you, the enemy is the guy holding the kite. No matter how you move, the kite stays the same distance away from you.

I always understood it as, if you looked at yourself as the kite, the bad guy(s) you were easily outrunning were trailing behind you as if they were the tail of a kite. And if you were leading a lot, it really looks like a kites tail.

Put simply, kiting is to deceive the enemy by dictating range, luring him into a position that is not in his favor, while keeping yourself relatively safe and this is how it is done.

In PvE the term kiting is often used for a specific tactic where you try to get the faster enemies in a group further away from the center (by having them follow you for some time). This gives you an advantage as you'll be able to take out the faster and hopefully; smaller and weaker ships first, while being out of range from the bigger ships. In PvP kiting is basically staying out of range while sniping the enemy.

I do a lot of missions (solo), so basically Kiting is the only way for me to control the incomming DPS. And Kiting is not one of all the explanations here, it's all of them + some more. Kiting only meens that u are in front with a tail of rats behind u... I usually choose to "orbit" the ships that is slightly faster than me, in that way i will always go away in on direction with the enemy at my tail (kiting). This way i can easily take ut the fast (frigs) first (to avoid scram/web), then the cruiser etc, then the slow BS in the end. This is one of the many ways to Kite a mission...
