In highsec, what sort of damage in terms of dps does an average POS deal out? Assuming it does have guns/batteries etc, but isn't specifically meant to be a deathstar.

This depends on lot if someone is manning the guns of the POS. If not, they switch targets randomly, else, prepare for OMGWTFBBQ damage. Sol: A microwarp drive? In a battleship? Are you insane? They arenĘt built for this! Clear Skies - The Movie ROTDK is recruiting

According to our POS management software, our POS has a 30,000 point volley, does about 2,500 DPS, and can hit things out to (if I'm reading this thing right) about 250 km.
However, keep in mind that the POS defense AI is the crappiest thing I have seen in ages. It randomly changes targets and doesn't usually focus fire.
A competently defended high sec POS with trained gunners will chew through battleships at a startling rate. One left to it's own devices will have a hard time killing anything at all.

* Small POS gun should instapop anything smaller than a BS that isn't moving faster than it can track or is out of range (~200+ km)
* Medium POS gun should be able to take down a NON-RR BS (EW platforms needed for the RR gangs) in 1-2 shots
* Large POS guns are for capitals, but, how long it takes depends on logistics being used by the attacker - large guns are (almost) useless in hisec

I hope this doesn't sound facetious, but you were right in your OP, the average ranges from 0 to lots.
A better way to deal with this is to look at the individual modules and see what sort of damage each module puts out. There are so many different combinations and permutations, that it's just about impossible to give an average. There's not even an 'expected' damage level as with ships or NPCs.
Most FCs when dealing with a POS will have a scout go take a look, then do some calculations for that particular POS. Then they'll decide what order to attack it in, given the available forces.

POS turret DPS probably isn't the killer so much as POS volley is. This is also why manned POS batteries are extremely deadly.
Consider a medium AutCannon vs. a T2 AutoCannon:
Medium AutoCannon Battery: 43x damage multiplier / 7.88 second RoF 800mm Repeating Artillery (T2): 3.234x damage multiplier / 7.875 RoF
So the POS version is roughly equivalent to 13x the largest T2 AutoCannon with the same ammo (T1 or faction).
