For a gaming machine 4 gigs is more than sufficient. And like has been stated you will need to use the 64bit version if you want to use anything higher. But the good news is that 64bit drivers have for the most part caught up with win7 so its not an issue to install it unlike at launch when drivers were buggy for the most part.

To be honest, I mostly just play EvE - will want to run up to 4 clients at once, though.
My computer that recently went up in flames had win7 32bit with 4 gigs and it ran 5 clients flawlessly so 6 gigs will work just fine.

Eve does not like sli and will go all funky on you. Drop the slo and get the biggest baddest single card you can afford be it ati or nvidia. Be aware that incarna is being developed with nvidia's apex tech so that might be a consideration for you.

Afaik incarna isn't going to support sli but then again they haven't said it won't but don't count on it though. And the apex tech uses the newer nvidia gpu's to offload massive amounts of processing from the cpu and greatly enhance the amount of detail of movement you get. Ati does not support this and will rely on the cpu to do all the work. Not good news unless you have a top performaing cpu and even then I will bet you will still get reduced quality. So as far as eve is concerned I would reccomend nividia over ati even if ati has the better price/performance point atm.
