I'm looking for something to start off on manufacturing on my Industry alt, but I'm not sure what I should start with. I was thinking cruisers, then going to maybe a Vexor or Stabber?
Any advice for an Industry noob on where to start off with manufacturing?

Don't start with ships.
Do start with some sort of module or ammo.
Do do the research to see if it's even profitable to manufacture the module or ammo before you invest in a blueprint.
Don't ask other people to tell you what's profitable. You're competition. ---

Check the market, is there a profit to be made on those cruisers? If not then check other cruisers, if there is still no profit to be made then maybe change the location you are doing business in or check other items.

Seriously.. jus' crunch the numbers yourself. You really aren't goin' to get a straight forward unbiased answer.
Suggestion.. ammo type in region where that ammo type is popular, sold in a station that doesn't seem so popular, hugging a low-sec and/or mission hub system, at a mark-up. They'll sell and for profit.

Missiles are good. Cruiser BPOs are expensive and require a lot of research before you use them

I'd say look on contracts for researched bpc's to build from whether you do modules or ships look at all materials needed check cost to build multiply by number of runs and see if after all materials and bp cost make profit if yes fine if no then look for something else also check if you would make a profit selling to buy orders that way if you want to can sell instantly or put sell order up and make more

I would advice you to start with something like ammo or drones that people burn through in quantity, ships last a care bear forever but ammunition and drones go much quicker. last time i checked on building ships I could sell the minerals for more than the finished ship was worth on the market.

I'm sure Ghoest was being sarcastic. Even so, I really don't care if people are too stupid to realize that their minerals have at the very least the value of the highest buy order within range. It doesn't matter, because those people simply can't mine fast enough to be a threat to my bottom line.
Here are some tips for people who find themselves competing with someone who undervalues their minerals:
1. Buy their product and re-post it at a more appropriate price. If they are selling below profit, you can just consider them a member of your production team! 2. Buy their product and refine it back into minerals to build something more profitable. 3. Thank them for showing you that whatever you're building isn't as profitable as you thought, and go build something else. After all, if #1 and #2 aren't viable, then perhaps it is you who is trying to sell at too high a price after all!

I've seen it too many times, and some of them are quite serious, even rabidly so.
And bear in mind that cost does not equal value.
As far as pricing manufactured items, I am sure a lot of people don't realize the true cost of making something. I've worked up cost on raw materials for something and it is easy to make a profit. But add in station costs for research/manufacturing and the margin shrinks.
Personally I am just at the stage for manufacturing my own stuff for practice as I continue to work my skills up. Even at a (monetary) loss (as long as it is a minor loss) I still gain the convenience of not having to go fetch stuff from however far away.

You already have a lot of good advice here but I'm going to add my 2 cents. If you're not manufacturing now then chances are you're doing something else. Take a look at the ships/mods/ammo you use daily and figure out what makes sense to produce. The ammo that's best for your region or ships you most often see will sell more then the stuff you don't use or see. Think about not only what makes a profit but what you can sell the most of.
And since I am no longer in that business I'll tell you that ammo and missiles are great for starting. The BPOs are cheap everyone needs ammo so it'll sell.
