I see your taking my suggestion of getting people who know about EVE and economics instead of someone who barely knows economics and nothing about EVE.
Akita T would be good but I am sure there are others who are just not vocal and prefer to rake in billions silently who would be up for this as well.

I have an degree in economics - with specialization in econometrics/financial modeling. I trade and to a lesser degree develop alpha generating statistical arbitrage/risk arbitrage models at a proprietary trading firm.

I would put my hand up that I have an extensive history in trade and wholesale marketing and international distribution along with financing projects etc. Though currently inactive in the role (retired) I still play moderately efficiently in here.

Q: So EVE markets itself as a huge economic sandbox... A: yeah, you see... on the markets prices are determined by supply and demand. The supply side is tightly controlled by CCP through spawn rates, drop ratios and production processes (first two can be adapted by CCP instantly without players noticing, last one can be adjusted roughly every 6 months), the demand side is firmly controlled by CCP, as well (see the insurance changes proposed for Tyrannis for an example on how to micro-manage the demand on certain types of ships).
Q: I heard there are banks in EVE... A: well, you might have misheard - there were banks in EVE and there might be operational banks in EVE at some point in the future again (BMBE is more a mutual fund than a bank); but we have a lot of failed banks/banks that were scams from the beginning...
Q: bank failures? maybe some parallels to the RL economic crisis? A: the only parallels exist at such a general level that they are basically meaningless; just about all the advanced financial structures that contributed to the crisis IRL are not only non-existant in EVE, they are even (practically) impossible.
Q: I read the EVE forums and heard some talk about a secondary market and audits and such... A: people use these words for RP reasons; the "secondary" market is really a primary one and what so called "auditors" do has more in common with the work of a sleuth than that of a RL auditor.
Q: The markets in EVE are dynamic, ... sandbox ... what about advanced financial instruments? A: as said above, due to the unenforceability of contracts many of those are practically impossible (especially futures); you can trade in mineral derivatives but to my knowledge almost nobody knows about it/actually does this.
Q: So what makes EVE such a good simulation of RL economic theories? A: There's nothing special about EVE. It is about as good a simulation of RL economics as the nearest kindergarten's sandbox.

Get the same amount of thrill from closing deals in real life as making deals in game.
same thrill from running a scam in game to hiding my money in Vanuatu accounts from federal governments.
Love the fact i made enough money during the financial crisis to let me retire early while all the mum's and dad's went under... just like eve...survival of the fittest.

I am a Ph.D. student in economics, having entered the last year of my program. My main focuses lie in behavioral economics, experimental economics and game theory. Not exactly finance, though. However I have been teaching economics at various levels at my university for five years now: from first year macroeconomics to fourth year game theory.
I actually tried several time to reach Doctor Eyj=lfur Gu=mundsson, Dr.Eyjog here, since I have planned to run experimental economics sessions within the EvE Online synthetic world, this summer. He did not reply, but hopefully heÆll see that topic.
I have been playing for more than two years, and yes, economic realism is one of the aspects of the game I am most interested in. Trading is, without any surprise, my main activity. Last year, I managed a small trading hub in nullsec for several months. It generated something like 12B over five months. It was a really good experience, but highly time consuming, so I had to quit. Now, i am back in empire, and play a lot less. However, I still try to consistently make 2.5 to 4.5 billion isk a month, which is a lot for some players and not that much for others.

The initial post seemed a bit vague to find someone seriously involved in what you are talking about irl. Seems much more likely to find armchair specialists. For example, GF might be useful but it'd depend heavily on your goals with the interview.

Not entirely sure what you're looking for ("financial-types" covers a broad spectrum of disparate disciplines and expertise).
