I just bought my first freighter (yay me!) and have been considering the curious item called a 'general freight container'. Since they don't compress anything, what are they good for? Just for organization? I guess somehow I was under the impression that freighters needed to carry things in containers... now that I know they don't, I'm curious about them.

Sorting stuff is pretty much it. It can be helpful if you are hauling for your corp and each person puts his stuff in a separate can. Can also be useful if you want to deliver stuff to different stations. Just mark each one with the delivery station so you don't have to sort through a mess of stuff. If you put a can, any can, inside a courier contract, you can't see the contents of the can.

another very good use for general freight cans, of various sizes is to put one in the cargo hold of any ship (assuming you find a size that fits) and then it will actually expand your cargo storage capacity. For example a giant secure container will take up 3000 m3 of space in a cargo hold, but you can put 3,900 m3 of stuff inside it. Unfortunately with freighters this concept doesn't work because cargo containers of this type must be packaged to ride in a freighter, however if you use this idea with an industrial ship you can significantly increase the overall cargo space. You will find though that some items such as people and perishable things can not be put inside a cargo container, but for the most part this works very well. My salvaging ship has 3243 m3 of cargo space on its own, but I throw a giant container (assembled of course) and the container holds 3900 and can be opened by double-clicking or right-click and select from pop-up menu while in space. When I collect the loot I just drag it all into the container and then the salvage automatically goes into the remaining 243 m3 of space in my ships cargo itself. Works out really nice. You can also use a "Huge", "Large", "Medium" or "Small" container if your ship can only hold one of those sizes.

An item that holds 120k m3 and is 120k m3. It does not work like a Giant Secure Container that you are referring to.
Used in freighters for sorting, or keeping freighter pilots from peeking inside courier contracts.

I figured out another use for them... you can transport them to 0.0 stations (where station containers, etc. are unavailable) and use them to store your things. They're much cheaper than building station vaults locally.
PS: No, I didn't fly my freighter into 0.0. I just found some of these containers on the market there!
