I love eating lasagna. Its a bit a tougher dish to make than I can be bothered.
Still though will be interested in recipes.

Mmmmm, love lasagna. Its spagetti you cut like a steak.
As far as the recipes go I just use the bog standard pesant style of cooked and crumbled hamburger mixed with my favorite canned pasta sauce layered on the lasagna in between cottage cheese and sourcream along with a nice layer of fresh grated parmesian on top. Cook at 325 degrees for an hour or so and enjoy the heart attack.

My favorite pasta dish is definitely chicken parmigiana with spaghetti. Sadly, a lot of restaurants are unable to keep the chicken nice and crispy, and takes on the form of a sloppy mess because they add so much sauce to it. The breading just slides off the meat. Olive Garden manages to get it right though.
I know all my Italian and Sicilian friends and family members will kill me, but all pasta tastes the same so I avoid the large pasta like Rigatonni or Ziti and prefer angel hair, spaghetti or linguine. The secret is in really long, slow cooking of the mince sauce. Liberal use of cheese also.

Nutmeg and plenty of cream in the white sauce. Chicken livers and plenty of red wine in with the usual stuff with the mince, and reduce it slowly. Make a huge batch and freeze a load.

about 10 Freezable tins to store it in...
A BIG PAN, like a stock pot
sauce 1kg of beef mince 230 grams of smoked back bacon (streaky would be fine too) 2-3 Large onions 3 Beef Stock cubes (OXO) 2 cans chopped tomatoes Half bottle of red wine. (use cheap stuff, its only for cooking) Worcester sauce if you have it, just a couple dashes. About 8 cloves garlic - sliced/minced as best possible

Cheese Sauce Alright, I broke my scales by dropping them accidentally at this point. Try to use your judgement, my measurements will not be accurate for this part. Sorry.
A SECOND GREAT BIG PAN
~200g butter ~sieved self raising flour - this is the bit you need to use your wits on! Make sure you have enough. (I used "sauce flour" from Sainsburys but S.R. should be fine if sieved) ~turned out, I used about three pints of milk for this recipe. ~dash of salt/pepper/seasoning ~300g cottage cheese ~300g mature cheddar ~few tablespoons of 'grated italian hard cheese' (ie cheap parmasan)
Righty ho... Lets make lasagne....
Dice and sweat the onions until translucent. Add diced/mashed garlic. While doing this, chop the bacon. Once onions are done, move them to a temporary bowl, add a little more oil to the pan and add the beef.
Start stirring, add stock cubes, and bacon. Cook and stir until it feels firm, and looks kinda browned. Turn up the heat, and add your tomatoes. Keep mixing until it starts to bubble, we're cooking now lol! Don't be afraid. Grab your wine!
This is why I said use cheap wine... Throw about half a bottle in the pan. Mix. Should be a bit wet, this is fine. We're going to cook it for hours! Add your herbs and spices. Bring to the boil, and then simmer on a low heat with the lid on for a few hours.
Eventually your bolognese sauce will start to become not only delicious, but thicker too. If you need to speed it up, you can add gravy granules or cornflower, but the Cat endorsed method is simply reduction. Be patient lol.
To make the white sauce, melt the butter in a large (remember I said big pans) pan on a low heat. Start stiring in the flour, until you have a dough like consistency. It must be like dough, and you must cook it, so stir it up for longer than you think, just dont burn it.
Now start adding the milk, gradually. Once you've got a sauce like mix, start adding the cheeses and whisking until your arm goes numb. This is really hard work, I suggest having a friend, because its really hard work.
Alright now you should have a delicious bolognese sorted, and be busily whisking your roux / milk / cheese! yeah your arm should be aching by now.... if it isn't, you're doing it wrong, seriously.
Take your tins, I found it easiest to make them in batches of three.
I use a tablespoon for cheese, and a ladle for the beef during this phase, takes a bit longer but you get a lot more precision.
Layer about 1cm or so of bolognese sauce in each tin, then using the spoon add a layer of cheese sauce. Be careful to try and keep the layers seperate. On top of the cheese layer, add lasagne sheets. They don't need to be pre cooked, though that is an option. Repeat what you just did.
You should have beef->cheese->pasta->beef->cheese->pasta. Add extra grated and parmesan cheese to the final layer. Sprinkle with mixed herbs or herbs de provence to make look nice.
Bake on about 180c until the cheddar you put on top starts to go crispy Very Happy
Goes well with chips and / or garlic bread.
Hope I haven't missed anything out, but please enjoy the lasagne :D
oh yeah, freeze your extras! I gave one to my grandad. They make kinda weird, but nice gifts :)
