Is there a tool out there currently that will accurately show the average volume of an item traded over the last X number of days?
Eve-metrics only shows the volume on an exact date. Eve-central's data is way off when compared to in-game region graphs (and changing the hour range on Eve-central doesn't have any affect anymore?). So does anyone know another way to acquire this info?
It's not possible copy/paste data off of the in-game Price History table is it?

No such tool can exist, as there's no way to gather data about actual trades.
EVE metrics and EVE Central (and all other tools) can only estimate trades by comparing buy and sell orders. But orders can be canceled or they expire = vanish from the market although no trade has happened. Therefore it's just an estimate of trades, not real trades.

I don't think this is correct. Cache-scraping tools, such as the EVE Metrics Uploader, read the actual price history data, and that includes the number of transactions and the number of items sold per day. With those numbers, it is at least possible to compute average daily volumes. I'm not sure exactly what EVE Metrics or other tools actually publish, though.
My recollection is that any cache scraping tool I'm familiar with forces you to upload the data, though, so maybe there is no stand-alone cache reader. E.g., EVE Metrics Uploader doesn't just read the cache data for you, it automatically shares the data that you are viewing with all other EVE Metrics users. á á

I wish there was a tool that did it but there isn't really one that is "accurate".
The biggest problem even if it could capture cancelled/expired orders is... Resellers.
To give an example - Do this - Place a buy order on the market for 1mil units of Trit, have it get filled, and you re-list that 1mil units for a higher price. The same 1 mil units is being purchased and sold, and you don't know if the million units you purchased wasn't purchased off someone else to start with. The end result is 2 mil units of movement, for the same 1 mil units of Trit.
I captured Jita data for about 20 building material items for over 6 months years ago. When I did the math it came out rather odd, the only explained was literally, resellers.
You have no idea how much is being purchased for the sole reason of reselling. And you can't assume buy orders are there for just resellers. CCP would have real consumption tools in place like how much is actually getting used vs how much is brought and sold but giving us that information would break the market.

This is for google spreadsheets, it will give you last 100days of "movement" data globally for the item with the type id "17889"

edit: I have linked this script several times in MD now (Cyaxares II is my alt) and yet people still are unaware/claim this functionality is not even possible. Guess that goes to show that the necessity of downloading Python really scares people off  At least at the time I wrote that script Entity's Reverence library was superior to any competing offers (mainly libevecache).
Indeed, just so you are aware my donation comment was in relation to a particular piece of market analysis offered by evemail.

Right, i.e., the cache files include (for items that you have viewed) the daily- and regionally-aggregated data that you can see in-game in the Price History table and chart.
And while you can click the "Export to file" in-game button to dump the Orders data, there is not yet an equivalent button for the Price History data, so the only direct way to get at the latter data is the cache. á á
