I have no experience yet in large scale PvP but from what I've seen, watched and read, Minmatar have a minimal role in large scale PvP.
Supercaps, BSs and HAC fleets--what I generally consider large scale--are dominated by armor and more specifically, Amarr. I know Lokis are used in the Zealot fleets but I don't think any other Minmatar ships are extensively. Am I missing Minmatar's role in large scale battles?

sniper fit munin and sniper fit tempest deffinately work well, for shield gangs even a snipercane is viable. Havent flown caps or supercaps to comment on those.

Munins aren't bad HACs, certainly better than diemost and cerb. Scimitars are exellent shield logistics and can be found with any shield gang (mostly drake fleets). As for battleships and supercaps... not much. I'm not a fan of the minmatar bs in fleets. I've seen exellent pilots use tempets and maels for fleet work or rr typhoons, but for the most part amarr bs is -the- choice for fleet bs. BS fleets are almost never shield logi (at least in nullsec.. I assume that's what we're talking about since you mentioned supercaps and hac gangs) and minmatar have flat-out the worst caps, to say nothing of supercaps (I haven't seen a matar cap outside of a stray nidhoggur in ages).

Munins are horrible,
Any elite Alliance worth its salt will plead for Stabber Fleet way before they see Munnins there tanks suck balls and to top it off they have subpar DMG compared to Zealot, and Awkward ranges, thety are always primary in every fleet I have seen.
Funny part is Vagas are usually a better choice even for Armor since they at least are so fast with AB`s they live alot longer.
Tempests make wonderful Snipers in large fleets because they are throwaways and very cheap mixed with huge Alpha and great speed. Maels also are very good, but Pests are usually better since the cost differance vs performance isnt worth 100 mil isk.
Loki makes a wonderful "Super Munin" and is worth every penny if you have ISK. Dont buy a Munin if you love yourself. 
Also on side note most Hac gangs dont engage at 100km anymore as they have realized that 65-70km is a more awkward range for LR BS`s, out of Pulse Range and mostly out of ACS Range and under Arty Rails and Beams or the LR have to use a horrible Ammo type, so Cerbs are very good when in the right gang.
Cerbs@70km Sure can kill Logi like CHamps or better yet force Ewar off or kill it so they make a great 5 man addition to a 30 man Hac Gang.

Muninns are the best ship for sniper HAC gangs (which still engage at 70-100km ranges, contrary to what others have said). Arty alpha is more important than the higher DPS of beams, and the muninn gets some utility slots and a drone bay to fend off frigs.
Claymores, Sleips, and Lokis all mesh perfectly with sniper HAC gangs.... claymore and loki for bonuses, and sleip + loki for DPS
In armor HAC gangs, only option for minmatar a SFI, muninns and lokis in this role are pretty horribad.
Tempest and Mael are both very capable fleet BS, though second to amarr with the apoc.
Sabres are the best light interdictors
Broadswords are the best Hics for shield buffer, though I like armor Hics for tackling supers
Dramiels are basically minmatar, and are the best interceptor class ship 90% of the time
Rapiers are great FC or FC supporting ships, they can create warpins or get intel very easily, while maintaining a good utility.
The minmatar supercarrier is fairly awful due to lolEHP, but the ragnorak is nice for instapopping battleships with its arty (if it gets in a situation where it is fielded for extended periods)

Stabber Fleet Issue does pretty well in Ahac gangs.
More EHP then a zealot, more mobility because of dual prop. Can tackle better though somewhat less dps and range.
Price: about the same.

The tempest and maelstrom good idea but amarr and gallente are more alanced and strong, explosive is termed rarely from its lack of potential in long range fights i find as the shields are more firstly popular.

So what you say is that because armor tanking races are more popular you want damage that is good against shield tanks?

Munnins are very bad in armor gangs, but in shields they are pretty good, although its not like they have massive volley DMG.
Loki is pretty Cheap for how powerful of a Hac you can make it and with a good FC will last a long time.
But the Stabber Fleet Issue is great in Arm gangs and almost same as Hac cost.
As a whole the Arm Hacs are the new flavor and yes Hac Gangs are getting closer range than before, I think because there is a major DPS/Volley diff at the 70km to 100km range for a Hac and the enemies you shoot are still usually out of thee range, it also draws BS gangs and stupid FC`s into fights they shouldn't get into, also enemy's tend to think you are out of position. 100km seems to far but 65km seems attainable to the BS Gang FC unitl they realise all the chasing has brought them no closer and they have lost the upper hand along with 30% of there gang.
Minni BS are great because there volley diff isnt like the Munnins of 30-40% more than the Zealots, but more like 200% more than other BS`s. Where you can get 11ke 11k Alpha per Tempest all you need is 20 of them to insta pop a Freighter
