Being up till now a carebear, I decided to try out some pvp for once. So I took a cheap frigate into low sec space and started shooting at the closest random cruiser.
I got a warning that this attack would reduce my security status. I just ignored it and opened fire. The stargate guns then immediately blew me up.
Why? I thought low sec meant you could shoot each other without interference. What did I do wrong?

You thought wrong. Killing people in Lowsec is still killing people in Empire, and therefore illegal. It is just not covered by a Concord presence to enforce the law. However doing things within range of gate or station guns will still incur their retribution for your crimes.

CONCORD doesn't appear, but the gate or station guns still shoot you. Although, some lowsec gates/stations have no guns, and others only have 2, easily tankable.
But still, "no CONCORD interference" means that if you were at a belt, away from sentry guns, you would have survived. But if you open fire near a gate or station, you better be prepared to tank the guns.

How long am I going to be a Concord target? Back in hi-sec, I docked and waited for the aggression countdown to expire (twice), but Concord keep attacking me. Will they stop?

I'd recommend re-logging when the aggression countdown timer expires. CONCORD should stop attacking you after your cooldown expired. Although it can be buggy if you dock in CONCORD stations (where the sentrys shoot you and give you GCC).
The only other problem I can think of is you having too low security status to enter empire space. Did your security status drop below -1.9?

Theres an agression timer in the upper left hand corner.
Mouse over it to see exactly how many minutes and seconds you've got.
It's important to note that there's a difference between CONCORD and Faction Police.
When the agression timer is Red, CONCORD will attack, and you will not be able to survive(and if you do, it's classified as an exploit).
When the agression timer is Yellow, sentry guns will attack and faction police will attack.
Sentry guns can be tanked (but not by a frig, they also ignore tracking).
Faction police can be evaded by warping quickly.
Also it's worth noting that those timers can be reset.
The yellow agression timer is reset everytime the sentry guns shoot you.
The red agression timer is only reset if you preform an additional criminal act.
and further more why do i even need a sig? |

You can attack people anywhere in low sec, however if you do it near gates/stations, you will have to tank the sentries dmg. So if you fly a frig and attack at gates/stations, you are toasted however attacking them anywhere else, be it at safespot/planets/belts is ok . Wait the red timer on top left to go back to 0, otherwise you will be shot again at station/gates
