I'm about to get started on my Industrial alt. He'll be doing everything from Mining to Hauling. Perhaps even manufacturing down the road. Is any faction superior to any of the others? My main character is Caldari and I'm kind of interested in some of the other ship models that are out there. I thought I'd ask here and find out, because if there's a superior ship for mining that isn't a Caldari vessel, I'd rather make the alt a member of that race, rather than spend time learning to fly a different faction specific vessel.
Thoughts?

Welcome Owen!
In EVE, it does not matter which race your pilot belongs to. You can train each and every skill, regardless of heritage. If you pick a faction, you start with basic Frigatte and weapon skill training of this race. But nothing you can't train within a few hours if you prefer other ships.
Just create a new pilot, which suits YOU the best (looks, roleplay, ...) and train whichever <Faction> Industrial skill you like. AFAIK the Mammoth has the biggest capacity.

fake-edit: I tried the Iteron V subito in EFT with 5 EC2 and 2x T2 and 1x T1 Cargo Opts and it says 41848. Although I think T2 rigs are a price-overkill

The best mining vessels are ORE ships. Specifically, the Hulk for actual mining and the Orca for mining support. Those are not race-based at all. The Hulk takes a while to get to, but there are several other ORE mining vessels that don't take as long to obtain. For example, the smallest ORE mining vessel is the Procurer, though most people go straight for the Retriever.
There are faction-specific mining frigates and mining cruisers that do a decent job if you can't fly an ORE ship yet, but they quickly fall far behind mining in a proper mining barge. Since the end goal is generally an ORE ship if you are going to mine in earnest,I'd encourage you to just use the most convenient of the mining frigates and cruisers instead of worrying about the marginal yield differences between the factions.

For mining, it only matters up to the cruiser level (Caldari Osprey is best) but if you're serious about mining you'll be training Mining Barges (which is not race-specific) and flying a Retriever within a week, followed eventually by the Covetor and Hulk.
For hauling, each race has different strengths. Ultimately you will have to get [Race] Industrial level V, so choose wisely:
Amarr have the biggest cargo capacity T1 hauler that can be trained within one day (the Bestower at level 1-3 of the skill). They have one of the most agile T1 haulers, the Sigil. They have the largest cargo capacity Blockade Runner.
Minmatar have the biggest cargo capacity at level 4 of the skill (the Mammoth). They have the most agile Blockade Runner, and the only Blockade Runner with a spare high-slot, which is great if you're operating in wormhole space and need a probe launcher.
Gallente have the biggest cargo capacity in a T1 hauler, period, but you need level 5 of the skill to fly it (the Iteron Mk V).
Caldari have the largest capacity Freighter and Jump Freighter. They also have arguably the highest-capacity, best-tanked Deep Space Transport.
