So I am running an ati 5850 with 3 22" monitors, and with eyefinity in windows it is rather easy to have Eve running across all 3.
Anyone have any idea how I would go about doing the same thing in Ubuntu?

It can be done, though, in my experience it doesn't perform that well. (Intel Q8400, 8GB RAM, Geforce GTX 260, Fedora 14.) But here's how you can do it:
Simply make EVE launch in an emulated desktop that spans both monitors. You can do this by going into the wine configuration menu (winecfg at the terminal) and creating custom settings for eve.exe. Then you'll want to make the size of the virtual desktop to be the width of both monitors, and set the height to the height of the monitor (assuming they're both the same size).

They way I do it and was working very well (on FGLRX,I did not do that again on OSS drivers)
Edit your xorg.conf to have your 3 monitors assigned to one screen assigned to your server layout. Your current configuration is probably 1 monitor for each screen (so you have 3 screen) and they are assigned to the server layout.
If you set your 3 monitors as 1 screen, you can use the trick of the virtual window of the three monitors resolution and it will be fullscreen and perfect. The drawbacks of that : your gnome/kde bar will be very long (on your three monitors...) and if you put something full screen in wine but you put virtual resolution of one monitor, your two others monitor will be in a frozen state until you qui the program.
To fix this drawback, you can enable your onboard video card and plug a 4th monitor on it to be assigned on the second screen in xorg.conf... So you can have the menu bar on this one and you can watch movies/do other games/programming in full screen on the second "screen" while your waiting for the next carebear ravens squad to pass in your camped pipe.
In X.org term, Screen and Monitor are not the same thing, do not mix them ;)
PS : You don't need eyefinity on Linux and you can do it with different video cards too and it work for EVE since unknown (I used that a lot of time before EVE was multi-screen compatible.)
