Per http://forum.eveuniversity.org/viewtopic.php?f=29&t=40288 a new mining method is in the works. The current mining method is not challenging and takes so long it is boring. I propose some evolutionary changes that make mining more challenging and much less boring.
First, provide a means of searching for the ore. The asteroids are there but there is no indication of what they contain. Use a gravity detector to mark high density areas on the side of the asteroids you can see. There can be ore on the other side so you have to move. Send drones to investigate these areas. Drones can use a laser and gas-chromotography. The drones report back type of ore (by color) and amount (by size). Your cursor on a drone sitting on an asteroid will popup more information.
Second, place ore inside asteroids, moons and planets. As you progress in skill and equipment you can go deeper into larger objects. Larget objects have larger deposits. The gravity detector must be scanned across planets and moons (see game Mass Effect II for example but, of course, don't do it just like that).
Third, do the mining with drones. Your drone is the size of your cargo hold. Mark the target location with crosshairs and fly the drone there. It will search a little for highest density in case your crosshair placement is a little off. Then it will quickly extract the ore. It can employ expendable explosives. When the drone is full you return the drone to your cargo hold and return to the station or add ore from somewhere else. If rats show up you can put the drones into stealth mode. You must come back within 2 hours to reactivate the drones.
Ore can be replenished without destroying the asteroid. The ore in randomly injected into the rock.

Yes, the original post I referenced is kind of strange. But it did get me thinking creatively about the mining problem.
