Are Freighters the only Capital Ships allowed in High Security Space? Are they the only Capital Ships that are allowed to dock inside Stations as well?

The only ships that cannot dock are supercapitals (supercarriers and titans).
Freighters, jump freighters, and the Orca do not require the Capitals skill, so they are NOT capitals, even though they are built with capital components.
No capitals are allowed in hisec.

Even though Freighters and Industrial Command ships (Orca) is built from Capital parts they are usually considered to be sub-capital, as they can use Stargates and jump into High Security space.
Following ship types cannot use Stargates:
Supercarrier and Titan are the only ship classes too big to dock in a station

It is worth mentioning also that a small number of carriers and dreadnoughts were built in high security space before the restriction was applied. These ships are permitted to remain in high security space under very stringent rules (with severe penalties for breaking the rules) and may not be traded. Thank you for the information.
I was wondering what happens to non-dockable ships after you log out? Do they just sit there? What if you decide you want to fly a Rifter, does your Nyx sit in empty space with an empty pilot seat? Basically, are you tied to your Super Cap until it gets blown up? How to you get more ammo into the cargo hold? I am guessing that when you are flying something that large you have to rely on friends to do anything, right? They have to bring you supplies and jet-can them to you?

When you logout in space, you disappear from space 1 minute later if you do not have a PvP logoff timer. If you do have a timer, then it is 15 minutes.
Typically the person in a supercapital will logoff in a POS force field, or at a safespot.
Stupid supercapital pilots die when they go AFK at a jumpbridge POS, then get bumped out of the force field (because many force field passwords are pretty much common knowledge).
It doesn't take much time or smarts to confirm your ship is logged-out by using an alt.

Several cause-and-effect things going on that explain the answers to your questions:
1. Any ship that you eject from and leave unpiloted in space can be boarded (and stolen) by anyone with the skills to fly such a ship. And you can be probed and your location found sometimes in less than 1 minute, so leaving your Nyx without a pilot makes it vulnerable to theft. It's such an expensive ship that, basically, people create (or buy) an alt to fly supercapital ships, and the alt will never leave he ship.
2. The way player-owned starbases (POSes) work is: you approach a tower (and associated structures) in space, and if there is a ship maintenance array in the POS you get various menu options to fit/refit your ship, and if there is a corporate hangar you can store and load gear and ammo. It's pretty much like being in a station, except you're still in space, within the shield of the POS but in your ship.
3. POSes don't have personal hangars, just corp ones, but both the hangar and the maintenance bay have a stunted security system, so, again, leaving your items or your ship unattended/unpiloted at a POS runs the risk of theft by the spies in the corp or alliance. A lot of people trust others enough to leave small or useful ships (haulers, shield and armor repair ships, probing ships) unattended at the POS, but never something as expensive as a capital ship.
4. These ships aren't solo ships. You need another pilot just to move the ship around (someone needs to fly to your destination system to light up a cyno beacon you can teleport to), and these ships have capabilities such as medical clone facilities and their own ship hangars and cargo bays, that really make them function much like mobile stations (or POSes). Most of the features of the ship, and its costs, aren't designed for solo play.

Yeah ... as I understand it ... there have been some large ships stolen because someone left them unoccupied.
There was a discussion in another thread about doing things like leaving an Orca unoccupied while you used a ship from it's bay to mine or something like that. I've forgotten the details.
In any case, someone said something about "Well ... how many people are there out there who can fly one of these things anyway ..."
It was pointed out that the problem wasn't how many people there were who could fly one - but how many people who KNEW someone who could fly one ...
As to caps in Hi Sec - there's the Veldnaught. Which ... if it's still in the Amarr system ... sadly has no belts to mine any more ... though ... perhaps it's mining mission space ...

Small correction about Veldy, it's still there and alive, and Amarr has belts so it is roaming around quite often

Maybe I'm confused. It's been a while but I had thought they took the belts out of the trade hubs ... or maybe ... that was just Jita ...
