For instance: Instead of clicking on a PI panel and having it open the same exact PI menu I can access already - Use the current window to display the planets I have installations on, centered on the installations on said planets (maybe even giving a breakdown of everything currently being extracted and produced and/or cycle timers), and I can scroll through them. Or perhaps have the ability to choose a specific item I wish to produce with a breakdown (animated with planets, of course, not more Excel) of what planets are required
Instead of a fitting panel that opens the fitting window - Have Images of ships projected upward with a breakdown of the fittings
On the balcony, add the ability to see the active ship's stats, maybe a breakdown of the cargo (visual, not excel), any damage, and a projection of a certain amount of recently activated ships to easily select from, perhaps?

You could also make it visually appealing, for example: When you walk closer to it the actual hologram "appears/loads" up in a similar style to Mass Effects holograms.

everything you've said it what I THOUGHT ccp was goign to do. I have to admit I was disapointted when clickong the PI window, really just opened a pop-up window.
So far CQ is doing nothing to get rid of the "excell sheets" in space feel.
sure maybe you can't build unless you open the full blown PI interface. But the 3d UI should be useful, and scrollable.

I guess the one thing to keep in mind though is that they said they are going to be redoing parts of the interface that are out dated soon. "soon"

I'm assuming this is the big issue currently. They simply can't do anything cool with it until they have actually finished building the new UI framework and have it working properly. Until that is done there simply isn't a working long term alternative for excell in space that they can use.

It's coming in a future patch.
Incursion 1.6 implemented the CarbonUI framework, Incarna 1.0 brought the UI into a 3D space. A future patch/expansion, will bring the rest of the UI into 3D space.
Watch some of the trailers, with the UI actually popping up in space is what they want to implement.

This and what the OP wrote would probably require that the Incarna dev team stop building a space cash shop and start building a game. Fat chance. ... Return the Old Hangar Back... for Immersion.
