I am a bit confused on capital ship construction:
The components I can build in any station - I confirmed this by being able to build some in an NPC station.
But what about assembling the ships? Can I do that in an NPC station?
Freighters, orcas, jump freighters?
I know I heard before that capital ships cannot be built in high sec so I don't know if they only mean thing like carriers and dreadnoughts or all capital ships?

Freighters and Orcas can be built (and flown) in high-sec.
I don't believe any Jump Freighters can be build in high-sec.
The Rorqual is an Industrial Command Ship and pseudo-Jump Freighter (not a freighter, but jump capable), so I'm not sure if it can be built in high-sec.

Orcas can be built in hisec.
Rorquals can NOT be built in hisec.
All capital components can be built in hisec, just they cannot be assembled into a ship that cannot use a stargate in hisec.
In hisec, NPC stations can build everything and anything except Carriers, Dreads, Supers, Titans. In lowsec, NPC stations can build everything but Supers and Titans.
Supers and Titans need a POS and sov in 0.0 only.  -----------------------------------

Neither freighters nor nor jump freighters nor the Orca require the Capital Ships skill, so they are not capitals, can use stargates, and can be built in hisec. They can be built in hisec at any NPC station, or at a Large Ship Assembly Array at a POS. It is not a good idea to build jump freighters at an advanced assembly array because of the extra material cost.
Capitals all require the Capital Ships skill: dreadnoughts, carriers, supercarriers, titans, and the Rorqual. They cannot use stargates nor be built in hisec.

While yes it's true that to fly the ships, freighters, jump freighters and the orca do not require the capital ship skill, to actually be able to produce them they require the capital ship construction skill and they use capital ship components in their manufacture.
It's always been a source of confusion:
From the industrial point of view I (and this is a personal point of view) consider them to be capital ships.
From the piloting point of view I do not consider them to be capitals.
It's just important to remember that it's the piloting point of view that determines where a ship can be built, not the industrial one.
Or in other words - if it can enter and fly in highsec it can be built in highsec.

Freighters, jump freighters, and the Orca are just really big sub-caps. They'd require so many minerals to built that the material waste would be much larger without being built from capital components.
Capitals have four characteristics: 1. Jump drive. 2. Can't use stargates. 3. Require Capital Ships skill. 4. Built from capital components. Freighters and the Orca only have one of those, and jump freighters only two.
Regardless, it sure is a easy way to remember: check if ship requires Capital Ships, and if no then can be built in hisec.
