Wherever I turn I hear mumbling about towers in the nullsec, what are those?
It's obvious it's a tower, but what is it for? Two cows on a dead man's grave is worth the trouble of eating a burger at the wrong cave. |

A POS tower (Player Operated Station) Its like a long thin structure in space that emits a large area force field around it that other ships and structures can sit inside with relative safety. You can actually find these in empire also, just start warping to random moons and you can see them for yourself. Just be careful because they might shoot at you, not sure about towers in empire. The ones in 0.0 almost certainly will!

It's not a good idea to let them shoot at people you are not at war with tho =) Considering that one of the more hilarious bugs surfacing after downtime was when every POS got rabies and started shooting their owners... at least in null where I lived (luckily I was docked in an outpost after shopping before dt) 
Apart from keeping ships safe from random gankers, they can be setup for various purposes. You can fit them to store ore (corp hangars), run labs (blueprint research), production (building arrays) and refining (ore or, in null sec, moon products ("moon goo")).
They are often times used as living quarters or staging points in systems without stations/outposts. It's generally a hassle, but in wormhole space it's the only way of keeping you as safe as possible.
Pre-dominion towers were used extensively in sov warfare. CSMA system are waged war over to this day (even DRF does it despite the brain dead idea that NC had, which was like shewing off the hand that fed it its cap fleet).

Control towers can only be found in 0.5 / 0.6 / 0.7 systems in hisec, or any lowsec, nulsec, or w-space system. Control towers in hisec cannot attack anything other than war targets or aggressors, and in the case of aggressors CONCORD will wipe them out before the tower's defenses manage to lock target. In lowsec and nulsec the tower can be set to automatically shoot anyone the corp or alliance deems unfriendly.
Control towers are the heart of a Player Owned Starbase (POS). A control tower and its modules is called a POS.
They provide shelter via a force field that can be set to allow corporation or alliance members. A large control tower can have 50 million HP or more of shield before resistances are even applied.
A POS is primarily used for industry: * Blueprint research: material efficiency, production (time) efficiency, invention, copying, reverse engineering. * Manufacturing: everything except structures. * Reactions: simple, complex, booster, polymer. * Moon mining: obtaining moon materials that have no other source.
In nulsec, a POS also can be the end-points of a jump bridge (JB), allowing sub-capitals to jump over several systems without using gates. Cynosural system jammers can also be fitted to prevent capitals from entering the system. Cynosural field generators can aslo be fitted to act as a destination for ship based jump drives.
There are a few common ways to defend a POS: * Deathstar = lots of turret modules. * EWAR-star = lots of EWAR modules (useless against super-capitals). * Resist-star = lots of shield hardeners.
Control towers enter reinforced mode when they reach 25% shield. They start to burn strontium clathrates instead of their normal fuel, and the control tower becomes immune to attack. Once the strontium runs out, the tower can be attacked and destroyed, or the shield repaired to 50% or more so that more strontium can be added.

Here is a small instructional video of someone setting up a POS. Shows what it looks like from various angles. The big sphere is the force field. Structures and ships inside the force field can't be targetted and are therefore safe as long as the POS is online.
