Don't be silly. Old doom was colourful and used crisp (if low-res) pixel art. They rather look like something from Doom 3à

These are the large variants against simple and cluttered backgrounds of various brightness, and the old icons are consistently more distinguishable, identifiable, clear andà wellà iconic. Reduce the sizes and the difference becomes even more pronounced.

It's not about recognition (although, on that topic, the number of things you have to recognize has increased sixfold, so even that one is ever so slightly debatableà), but about clarity.
When you create a "fire escape this way" sign, you don't take a photo of someone running away from a fire, pointing his arms in the direction of the door you want people to go through because that is not an effective way to communicate the message. Instead, you have a highly simplified image of a fire, a running stick-figure, and an arrow, on a plain but eye-catching background, which together gives you the message "fire? run! over there →".
Icons do their job far better if they are simple graphical representations than an exact image of the thing they're meant to represent. Icons also do their job far better if they can stand out against cluttered backgrounds. Icons do their job even better if they can stand up to a dynamic environment, where they get contrasted against a number of different colours and patterns.
The old icons did all of that, because they were actual icons. The new ones do none of that, because they aren't icons.
They're very pretty pictures that kind-of-work as illustrations against a simple, bright background, and if that's your purpose, they might have some use.
