I see there are courier contracts made by other people in the game, but I was told they are all traps and ambushes.
That you pay the collateral, and then go deliver the item, and the people that put the contract up, ambush you along the path to delivery and take your stuff.
I really wish there was a way I could be a trucker, delivering things for people without fear of them having it as a trap just to kill me.
I know of the delivery jobs from agents, but it just feels hollow working for some NPC, I want to work for other real people, moving things for them for money. lol

If you read the contracts carefully, you can indeed do them safely.
- Don't take any that pass through lowsec or nullsec - Don't take any that end in nullsec, especially - If it seems too good to be true, it probably is - Peek inside the courier package (but don't break the seal); if all that it contains is cap boosters or other junk, is likely setup as a trap. Be super careful in doing it
Option B, and almost guaranteed safety (use when contents look suspicious): - Accept the contract on an alt. - Trade package to hauler toon - Fly to destination and trade back - Hand in contract
You use option B as the guys looking to gank you will invariably add your name to watchlist and be looking for you to gank. Don't make it that easy for them 
Most contracts going between trade hubs, and hubs to mission hubs are legit. Few people set up courier tracts to suicide gank, so watch for the low/nullsec routes and you'll largely be OK.

The only thing I would add is to make sure you have a little Deep Purple on your in-ship playlist and you're good to go!

I dont have alts, and dont know what deep purple is.
I do know to look at the person making the contract and if their security level is low like 0.1 or something low, chances are they are bad guys?
And the route, make sure it doesnt go into low sec zones, but then again I have been ganked in 0.9 zones so not sure how much weight that holds.

Only do jobs for your corporation and people you can trust. Any corporation worth its name will always have some hauling that needs to be done.
Not all public contracts are scams. However, there is way WAY greater supply of space truckers than demand for them, so the rewards you get for honest contracts are abyssmal. You would be probably better off ISK-wise just running courier missions. ---
