I'm an older player, been off and on for about 5 years, and back when I started Gallente was the race to be in PvP. Nowadays, however, it seems that the blasters they use are pretty much worthless. I never see people asking for PvP fits for Gallente ships anymore, and it seems like the general consensus is that blasters suck. What happened to make it like this?

Small blasters are fine. Medium and large have fitting and dps issues, alongside tracking problems.

Afterburners made a comeback, TE's change increased average brawling ranges, webs lost their god status .. those are the biggest factors as far as I am concerned.
Small blasters are still very competitive as they can generally ignore those things, but as bore increases the tracking/range ratios starts taking their toll.
I'd suggest spending some time in the whine forum (aka. Feature and Ideas) where we have been discussing possible solutions for almost a year now.

Tracking and dps isnt really an issue, but fitting is a HUGE one. This applies to hybrids in general, not just blasters.
Mediums blasters arent that bad either, its simply that fitting issues are most pronounced on the cruiser/battlecruiser hulls. Some of these hulls also suffer from wasting a bonus slot on the outdated and not very practical local tanking bonuses, i.e. Brutix, Astarte, Eos.
Large blasters dont suffer from fitting problems that much, more from the fact that the amarr battleship platforms, i.e. Armageddon and especially Abaddon, are so extremely strong in the close- to medium-range head-on engagement bracket that everything else pales in comparison.
Large rails are problematic since their strong points are not in demand with the few sniping fleets that are being deployed nowadays.

Blasters are still good and used alot in empire and low sec the problem is null sec. in null sec the ranges are simble to great, artycanes, HML fittet drakes and alpha fleets all fittet with MWD means blasters are a nogo.
dont worry thou, as stated the blasters are still in use, however u need the right fit for em, a megatron is good when it comes to L blasters and the dps of a thorax/vexor is as mucht dps as a battlecruiser so solopirating in these cruisers are a good option.
the real issue is that eve is about applied dps, who gives a crap about a close range ship in null sec when the term close range in null sec is 20-40 km. but dont give up, fly in small gang and go to low sec

Blasters are still useful in frig combat.. Ranis, Harpy, Ishkur, Comet, Dare Devil ect.. The Mega is also still the king of station humping, although a lot of those types are using Arti ships for the Alpha these days.
The biggest issue with blasters now days is in the Cruiser/BC with med guns. As others have mentioned they have fitting issues and IMO most blaster cruisers & BC's are too slow to make use of their high damage.
CCP nerfed the webs but they failed to give blaster ships any sort of agility or speed or tracking boosts.

They went from barely useful(hi I am a Nano Hac and I'm 5 times as fast as you) to compleetly useless with Quantum Rise(hi you are not supposed to hit anything at your combat range, have a nice day).
Any med and large platform with the 60% webs are just sorry excuses that fail at point blank and are useless as skilled damage dealers or for solo/small gang pvp this days. ---- Nerf Tank - Boost Gank!

sure you can use medium and large blasters just make sure you have 2-3 alts webbing the target with web bonuses ships.
Its more common than most would think.

I seem to hit just fine with the mediums without a web even. The problem with the things is to actually get them to fit on the ship, not to hit stuff that is in range.
