I've tried:
/evec_api/marketstat/type/sell/movement /evec_api/marketstat/type/all/movement /evec_api/marketstat/type/all/moved /evec_api/marketstat/type/all/mov
None of them work.... what is the correct xPath and how the heck do you find these things?

<evec_api version="2.0" method="marketstat_xml"> <marketstat> <type id="34"> <all> <volume>74048328268.00</volume> <avg>47.66</avg> <max>4999.00</max> <min>0.50</min> <stddev>467.86</stddev> <median>3.41</median> <percentile>0.00</percentile> </all> <buy> <volume>45519863119.00</volume> <avg>3.27</avg> <max>3.43</max> <min>0.50</min> <stddev>0.47</stddev> <median>3.28</median> <percentile>3.41</percentile> </buy> <sell> <volume>28528465149.00</volume> <avg>3.70</avg> <max>4999.00</max> <min>3.47</min> <stddev>686.01</stddev> <median>3.62</median> <percentile>3.48</percentile> </sell> </type> </marketstat> </evec_api> marketstat has no movement tag. You can try the volume

Thanks guys. I see the volume tag, but doesn't this only show the amount up for buy or sell orders? Is there no way to track the units moved (like on Eve-central item pages, or the history graph in game)?

Not through the API.
You could parse the dumps once a day. They contain the initial and current volume of an order.
Or ... you parse the actual HTML page
In any case you can forget the xpath part ...

I've tried pulling information from Eve Central to try and even calculate the Movement, but I can't seem to get my function and/or equation right. If anyone has an Excel function/whatever, it'd be greatly appreciated.
I've been experimenting, but they all seem to be coming out with inconsistent numbers.

It's actually very difficult to calculate the movement yourself, since it's very difficult to see whether orders have not appeared and disappeared before you grabbed the data again. On the other hand, it does give you a lower bound of items moved.
I have no clue how to do it in Excel though, sorry. --- "A fool flatters himself, a wise man flatters the fool."
