Hi guys.
I found my first hi sec grav site today. I am currently in work and an can only get one 1 client at a time here. I am mining it in a Hulk at the moment, but my question is how long will the site stay valid for? I wont be able to get to it tonight and possibly not til tomorrow tonight.
Will the deposits be there until mined or until next downtime or what?

If i remember well, these sites stay for 3 days.
But other players will find them too by scanning.

I believe this in an untouched site as from my survey scanner there is at least 1mil units of various Ombers (its a hi sec site).

At current mineral prices Omber is less valuable than minerals you can find in high-sec belts normally. Really, unless you're finding one of the Hemorphite sites, it's not worth it. (Maybe Jaspet.)

You'll find loads of 'Golden Omber' (refines 10% more minerals than standard 'Omber') in Belts of High-Sec 0.5 & 0.6 Systems. So this isn't really worth mining in a Gravimetric Site. 
If you scanned down a gravimetric site with low sec ores like Jaspet or Hermorphite, this is worth mining.

I haven't noticed any omber in belts in Caldari hisec. But it may be available as stated in other empire space. It certainly can be found in grav sites, though. Not that I care to mine it. May as well mine Veld or Scordite. Jaspet and Hemo, yeah.

The amount of time a Grave site will be active depends on a few things, such as the size of it, when it was first spawned, amount of mining done, etc.
I've seen large Grav sites last for 5 days. Most sites are usually mined out before then.
