I like this but I hope there is a little more to it.
When considering what it means it might be an idea to nail down where, how and why it appeared.
Questions like who build it, terrans or someone else, was there a structure on the Milkyway side of the worm hole. And maybe EVE actually referred to the gate in stead of where it went.

No, it really is Everyone Versus Everyone.
Some Dev mentioned it in the early 2000's I think.
It was the core design philosophy of the game.

Things meaning more than one thing is a very common theme in New Eden even if it is just by accident. Having a thing in the fiction mean nothing more than a semi out of character meaning I find less than satisfying. Also the Judeo-Christian Mythological significance of the word should not be discounted.
Hoping for a little bit more story though if there is any. You know something like Old Man Star.

I'm sure the EvE everyone vs everyone design core history is accurate. At the same time, that changes nothing wrt the fiction. Considering the cultural origins of the Amarr implying that Judeo-Christian thought was going strong at the time that the gate was constructed, this makes the reference quite plausible.
Think about it.
At first, there was Adam. God found this lacking. So from the flesh of Adam God created Eve.

There is a metaphysical aspect to EVE, a strong teleology streak runs throughout the lore. After all, EVE from a players perspective is just a game! or is it? Eve is Real.
That idea of doubt, expressed by Iron Labron in EVE and Rene Descartes is that we can never really be sure, about the world we inhabit be it EVE or (Real?) Life. That is one of the mysteries of EVE, that can never really be answered.
EVE is actually all those and more.
