Fortunately this has changed (since Revelations? I don't know...). The Procurement skill now has the flexibility everyone expects and it is no more necessary that the item has to be sold at the remote station where you'd like to setup the remote buy order.
How to do this?
1) Open the market browser and select the item you want to setup a remote buy order for. For example simply via search function in the market browser. It doesnt' matter if this item has any sell or buy order in the current region at all.
2) Click on the "Place buy order" button on the right side of the market browser. If you are docked the buy order dialogue shows the current station in the upper area of the window by default.
3) Click on that station name in the buy order window. A small context menue opens with an option "Select station" (or "Change station", I'm not sure). Now you can enter the name of a solar system and a browser window opens with all stations of that system. Select your requested station. Finished.
Of course you need the required level of the Procurement skill for the remote buy order to be accepted (for example level 3 for a station 10 jumps away from your current location).

You actually CAN. I once bought a succubus via escrow and I right-clicked on the suc and then clicked "Buy this item" and there were actually a few for sale on the market in that system. Bear in mind that you must already HAVE one of the item you want to buy to be able to use the "buy this item" feature and that hardly anyone would ever use it, but it IS possible :)
To extend this even further, once you have an item you can save it in your market quickbar and as long as it remains there, access the hidden market.
1) Acquire something somewhat rare 2) Check on the but this item to see if there a hidden market 3) Save in market quicckbar 4) Sell item for crazy profit 5) Go to market quick bar and still have access to this market
What? How does this work exactly? For example: I have a Dark Blood module in my (personal) hangar; if I right-click on the item the context menu doesn't offer me a "buy this type" or "sell this item" menu item (in contrast to "normal" T1, T2 or named items). So where is this "hidden market"?
