Combinations of meats can work really well; I can recommend a 3:2:1 beef/belly pork/chicken thigh combination for stew, as the variety of meat flavours really works well. It works well for chilli also. That's really true, I had not even really considered multi-meat stews. Clearly I'll have to try these out and figure out where they fit into the objective ranking of stew types.
I would like to suggest that the king of the stews is goulash. Beef and absolute piles of paprika makes for good eating, and has innate superior over other, non-paprika'd stews.
Then you make some with venison and enter a whole new dimension of taste.
Meat combinations are also good, but I'm not sure I approve of chicken in a chilli; chilli's should be red meat. |

Curry and spice and chili goes with white meats like chicken or duck or turkey, or more tender red meats like lamb (not mutton). I can't possibly condone the using of venison for currying. Beef at a pinch, but currying venison would be like currying rabbit; you just don't do it.
Chilli != curry.
I'm talking a good old fashioned stew of chunks of meat and chilli peppers that would make anyone in the Southern states weep at the beauty (and preferably at the sheer amount of capsaicin).

Speaking of, if you're after a simple stew you generally don't want to go over-heavy on spices, although salt and pepper are essential, and I personally tend to add a bit of ground mustard, a pinch of cayenne, and meat-appropriate herbs; start with a good, hearty meat stock, brown your meat properly, provide a good mix of vegetables, and leave to simmer until vegetables are cooked and it reaches your desired consistency. |
