I've got mining drones and all the skills to operate them.
I released them into space when at the asteroid belt, and clicked the mine command.
It doesn't really look like they're doing anything though, just orbiting. I'm mining with my lasers, but I can't tell if my drones are even doing anything.
Am I doing something wrong?

use mine repeatedly NOT mine.
Mine will only do one cycle.

Yup, "mine repeatedly" action. 
The drones will look like they are just orbiting, as you noticed. They'll do that for a bit, then return to your ship and drop ore straight into your ship's hold. On repeatedly they do it over and over... regular mine, they'll stop by your ship.

I tried that too. They still just orbit my ship.
It says in they're status though that they're mining. Is there any visual confirmation or is that it.
Secondly, what exactly do they do?

There wont be any lasers shooting off of them at the asteroid if thats what youre looking for. The most reliable way to see what youre drones are doing is to expand the "Drones in space" area and check what theyre listed as doing. It will show either "Idle", "Mining", "Attacking", "Returning to ship", etc.
The reason they look like theyre orbiting your ship and not returning to it, I bet, is that youre right up against the asteroid. If you want a visual confirmation step further back, as far as 10km with basic mining lasers, and you'll see them running laps to your ship and back to the asteroid. This does however slow their work down slightly to allow for the flight time.
