well, given that you 'know how prices work', you'll understand that obviously, your opinion isn't shared by many people.

Your opinion is irrelevant to the prices borne by the market. If you don't feel you're getting a good deal, then don't pay. Obviously the majority of people who are paying those prices disagree with you; it's their opinion that matters.

Only the people who spend money on it matter?

I don't think you understand how lack of demand impacts average prices.

When less people desire a product, fewer retailers will provide the product due to the fact that less sales volume directly correlates to less profit. Time equals money. Existing stocks will not sell as fast and will not generate as much profit as other, more desirable products.

This means that those who decide to sell the product will have to do so at a higher price in order to recuperate the initial investment in relation to the amount of time it takes to sell the product.

Except if people won't pay the current price, let alone the higher one, those producers that still put out the product are forced to lower their price if they wish to continue. If the price to manufacture the item prohibits making a profit at all, then the item becomes scarce.

Of course, this being EvE, SOME dim wit will still produce the item even if he is losing money on it.
To carve a successful niche for yourself in EVE you need to be able to out sell, out produce, out fight,-á out run, or out wit your competitors.
If you can do none of the above, your only option is to complain on the forums that somehow you are at a disadvantage using the exact same tool set-áas the rest of the player base.

That's right. It explains why the price will go down as people realize the limited utility of the Navy Issue Drake.
