Hiyall,
I've got myself four mining drones to speed things up a bit, but can't figure out how to deploy the little dears.
Any advice would be welcome!!

Underneath the overview is a collapsed tab labeled "Drone Bay". You can click on it to expand it. You can then right-click the label (or on the displayed drones) to get their action menu.
Make sure you select "Mine Repeatedly", or the drones will just go mine once, then stop.
The drones will then zip off to the asteroid you had targeted at the time, and mine, then return to the ship to autmatically drop off the ore. (The drones do not have a real mining animation... they look like they are just orbiting the asteroid)
Make sure you have enough Skill to operate them all... earlier this week I bought 15 drones to squish into my new cruiser, and discovered when I launched them that I could only operate two at a time. 
Oh, don't forget to scoop up the drones to your drone bay, before leaving the asteroid belt. The option for that is in that action menu, once again.

Forgot to mention... I assumed you must have had them loaded, to start with. Just in case you haven't...
To load drones onto your ship, you need to place them in the Drone Bay. (Not cargohold). Right-click your ship while parked at a hangar, and you'll see that option listed. |

I bought four, but looks like I can only use one!!
Ah well. I got them cheap, so maybe I can sell them for a profit somewhere.

You could train your "drones" skill, allowing you to control more drones. (Not the "mining drone operation" skill, which makes your drones mine more efficiently.)

Yea, it shouldn't take long to get your drone skill to 3. Getting decent drone skills is a good idea for any Gallente since some of our ships get very good drone bonuses.

I was checking the stats on some of those drones, and they all have a capacity far greater then that of my own cargo hold.
So what happens when a drone returns full of ore and it can't fit into my cargo hold? Does the drone just jetison it next to me?

That doesn't sound right at all... Mining Drone Is only carry 15m3 of ore plus skill bonuses...

Well, reading the stats:
Capacity: 1200 Volume 5.0 Mining Amount: 15
Volume is obviously the volume of the drone itself (in the drone bay) I guess then Mining Amount is how much they get (it fits your statement saying it's 15)
Then what the hell is Capacity? I thought capacity was the drone's capacity to hold the ore... doesn't make sense now considering the volume of the drone is only 5m... i am confused
