I'm starting out on a trial account and need some input on stat training. I know the standard way to go is to get your int, mem, and learning skills up but I'm curious as to whether or not it wouldn't be beneficial to invest a little in some other skills first to help make money by either mining or missions while waiting for all those learning skills to train.
Any suggestions on helpful stats to train for either mining or missions that I can use while I slog through the learning skills?

Get a few skills up so you can use some basic equipment, then train learning skills to around 3-4 (should take a day or 2 at most). Then get enough skills so you can have fun and use the modules you want.
At time you think you have enough to have fun doing what ever it is you do go back and train your learning skills up to advanced 4.

What would you consider essential basic equipment?

Some good basics to work up to would be a decent frigate (for now) or maybe a cruiser (for what ever purposes you need). Then you can use it for Mining, Ratting, or what have you. Then start working up those learning skills like mad.

Basic equipment depends on what you want to do :) For a miner tech 2 mining lasers might count (I don't mine so I wouldn't know). For a fighter a shield booster or armor repairer and an afterburner might be nice etc.
Basicly look at what modules you think look interesting and get the basic skills needed to use them, most of the time they only requier level 1 of some skill so getting them will take less than an hour.

essential basics would be:
Afterburner cargo expanders and nanofibers secondary weapons (missiles / drones / Nosferatu) - depends on the ship armour repairers/shield boosters weapon upgrades (gyros / heat sinks / mag stabs)
thats all I can think of right now, others will add more.
