Having lived with a complete psycho (and no thats not my 'other' personality kids) my only advice to you can be: get the hell out whichever way you can. My particular nutjob played a lot of mindgames with me and the relationship ended with her telling me I was going to dump her for three months until I'd had enough and finally said 'ok, if thats what you think then lets end it' At which point she screamed blue murder at me and threatened suicide.
My entire response was 'Theres the door. Get out.'
You have to be hard. If she is harming herself then she needs help. Right Now. And you are not the person to help her - Dont even try because you are emotionally involved so you will only dig yourself deeper.
You must look after number one - yourself. If she threatens you, dont react to it. dont give in. But dont call her bluff.
You must be strong. Do not allow her to dictate to you. And dont play her 'game'.
Think of it like this, was the fact that she self harms your problem before you got together? So why should it be now? Its her problem, let her deal with it.
Do not feel guilty. Cos that will be one of her games - to send you on a guilt trip so you do what she wants.
Now what I am saying is pretty harsh, but trust me. I've been there and done it. I came out of my relationship with deeply damaged emotions and it was quite some time before I plucked up the courage to get into another relationship.
Dig deep and do what esturary said - dump her and stay well away.

High Sierra is right on this.
It is easy to get sucked into a relationship with a self harmer. It is very difficult to get back out again. It sounds like she is already using the threat of self harm to manipulate you. It is already becoming becoming an abusive realtionship.
I don't mean to sound callous but she needs professional help from people who are distant enough to offer objective counselling.
You have to put yourself first sometimes. Explain that you will not be held to ransom and then explain that you are really scared by the idea of her hurting herself and what it will do to your relationship.
If she can't appreciate your veiw point she isn't emotionally ready to enter into a relationship. You can't look after every waif and stray that crosses your path.

I know how it is when you young guys get your first scent of a woman and go nuts.
3 rules to live by :
1) If she start giving you drama, walk. 2) If she ask for access to your money or bank account, walk. 3) If she pressure you to marry her, walk.
The deal is love in exchange for love, not money.
You give her real love and affection, and she should do the same for you.
If you decide to be with her long-term, get a pre-nup, and make sure she works. Like at a job, not "work" at home doing nothing.
If you're a high paid person makin half a mil a year, and she happens to be a checkout girl at the local supermarket making 5 bucks an hour, know up front that you are going to be carrying her for the rest of your life. She's gonna be living a standard of living that she would never be able to afford otherwise, and she is going to take it for granted, you're gonna be working in the salt mines bringing home the bacon, and she's gonna be on yahoo chat flirting with other men, and talking schit about you with the women's conclave.

I learned years ago that I will never NEVER understand women.
High Sierra's Theory on Women:
She decides that she wants me to do something. Instead of just asking or telling me, she tries to drop the subtlest of subtle hints. Me being male, I totally miss the hint because these things just don't appear on my radar. SO She gets annoyed with me because I havent done what she wanted me to do and she does it herself. So to make amends, I do something else that I think she wants doing, and besides the first thing is already done so I cant do that anyway. She sees what I've done to make amends. Gets even more upset because thats not what she wanted me to do and I never did the thing she wanted me to do in the first place anyway.
Cue: Sulking on the sofa cuddling the worlds biggest cushion (probably with tassles) surrounded by chocolate wrappers and empty wine botles. Watching some naff romantic film on TV while on the phone to ALL her friends (how is it women have so many when they are upset.... why do they have to call them?), running up a phone bill that makes 3rd world debt seem mere pocket change in comparison. This however is offset by the fact that theres no need for the lights and heating because theres enough candles in the living room to power the national grid.
and in some way its ALL MY FAULT.

I'll tell you right now, because I was with a "cutter". It will get worse...way worse. For me it got so bad I had to take her razors away and hold her down while I called the paramedics. She finally got better (with help), and I got MY life back. Someone said stick with her and help her thru it...and thats about the woest advice I've ever heard. Its an addiction, like drugs or alcohol, and she will only stop when she decides to. If shes as bad as you make it sound, the best thing you can do is try and convince her to get help.

I'll play along. Most women wouldn't be opposed to doing the ironing and the cleaning, as long as her husband/bf/whatever did the dishes and took out the trash. 
As for the guy with the cutter... I wouldn't cut and run, but I wouldn't stay with her. I'd make her sit down, stand back, and let her know how I feel about her situation. If she doesn't think she has a problem, leave. If she decides to get help, stay with her to help her through it if that's what you want to do.
