Do the skills I pick at the beginning of the game GREATLY affect my character development later on or do they just help me start off?
i.e. I want to be a fighter...but I start with skills that will help early mining because that is a quick way to get cash...will that hurt my fighting later on because I didnt start with say...advanced gunnery or something?

I wouldn't worry too much about this. Basically if the skill is implemented, you can buy it. All that your starting choices will save you is...
a/ A little isk if you select a broad spectrum of skills or b/ A little time if you select to specialise alot.
What does have more bearing is your stats, as these reflect how quickly you can learn skills. High stats let you learn faster. Low stats don't preclude you from any skills.
Personally i chose Amarr for the simple reason that Cha is pretty useless unless you're running a corp, or running alot of agent missions and it's easy to minimise cha as an amarr. This may change later if they decide to use it for trading skills etc but currently arn't implemented.
Finally don't forget that you can add up to 5 to any stat with the appropriate learning skill.
Just play whatever feels aesthetically good to you. Nothing else really matters as isk can buy anything you need, that actually works.

I agree, though having all rounded stats and skills would help you enter a variety of professions and roles in your roleplay experience in EVE. Although, in the long run, money is mostly what matters and affects what you can and cannot do.

And dont forget that some choices you do in the character creation may give you skills you cant buy! For example are some leadership skills, i dont know the names, someone help me?

Started my char with as many learning skills and highest levels that i could

The Negotiation skill very important if you plan to run a lot of agent missions. It is only available at char. creation.
5% per level bonus to agent reward. Will amount to big bucks in the long run.

Also, whatever you pick at startup remember to train the Learning skills early. Train uop your memory and intelligence so you'll learn the other learning skills faster, and get all the stat boosters up to 3 or 4 ASAP...
As for the skills you get on creation, Negotiation's good for agent missions, and extra levels of mining or frigate skill will help too. But really it's the stat bonuses from the various picks that are most important...

Jepp, start of to max. your Learning skills (Learning, Analytical Mind, Instant Recall...). This might be the best invest into your future, as you gain a lot of time and better performance of all other skills.
Having Learning maxed means app. that you save 1 day for any jump to level 5 of a skill.
Despite that (and as ISK will be the motor of your char's development), you might go into mining anyway. Therefore you should skill into this direction. Train Mining and Science to level 4 so that you can train Astrogeology (if you didn't start with it). This means that raising money through mining will not take toooo long. To have a solid basis on mining, you should head for this combo: Thorax cruiser with Mining Drones (Drone lv. 5 maybe Drone Interfacing for controlling more than 5 Drones).

Yeah I noticed way to late that the Defensive Operations, and Escort Duty skills (giving a 5% bonus to sheild recharge and max velocity respectivly) can't be bought. I don't know wether or not to start again.
