Okay, generally people do a combination of the following:
Miner (Shoot Rocks)
Hauler (Move Rocks or Items for trading)
Engineer (Build stuff)
Researcher (Make BPCs and sell)
Trader (Buy Low Sell High)
Stellar Cartographer (Insta BMs)
Spy (Alt)
Scammer/Low Criminal
-Escrow
-Hangar Thief
Mission Runner
-Blueprints
-Money
Combat Pilot (PVP)
-Damage Support
-Electronic Warfare
-Tackle
Piracy (In combo with above)
-Belt Rat (Honorable.. *coughyeahrightcough*)
-Gate Gank (Deplorable.. *coughyeahrightcough*)
-Extortion (Mining passes... etc)
Combat Pilot (PVE)
-Ratting
-Complex Running
What else am I missing? (I didn't even mention stuff relating to corp management or POSs/Outposts)
Don't you love EVE's open-endedness?

exactly - there are far more professions in eve than those that require you to be "properly" playing the game. Diplomat is another one.

The very idea of "professions" in eve is objective, you could come up with pretty much infinite niche classes and professions. Here is my profession:
CEO
Complex tanker
Fleet co-ordinator
Battle strategist
Scanner expert
Market opportunist
Ship designer
Engineer/Builder
Hauler
Bounty Hunter
Miner
Archeologist (Which is only cosmos stuff, unfortunately)
Hacker (cosmos stuff, don't get any ideas :p)
Artist (Well, I could draw someone a picture of their ship for ISK)
Battle Analyst/Software Engineer (check the spreadsheet on my site :p)
Mercenary for the federation/Gallente mission runner.
POS-operator.
Logistical Overseer of POS operation.
Consultant for any of the above (I like to help people out by answering questions)
And finally: Eccentric Billionaire. Not really a profession but my corpmates don't complain when I shower them in ISK ^^;
There are probably a lot more I've forgotten or overlooked. Much better than "Wizard", anyway.

And not only that, but redefining your role on an ongoing basis is also a unique thing about this game that I love.

a profession can be a mix of all above
i am not specialist in any field but i (in order) mine, haul, reprocess, improve bpo ME, build stuff and sell it.
and on holidays i do some missions :)
a fighter could tell you the same, one day tackler, one day damage dealer, one day scout and ... missions on holidays of course :)
EVE is very rich, i think doing an unique profession and be highly specialist in it let you miss lot of things
Only one profession i can't do : english teacher :p

Specializing heavily is the only way to get ahead in combat roles though, because unfortunatly this game has been out a long time and new chars are VERY behind the curve in skills.

Free-form Professions, ensure no limetations on professions. Be a trader, fighter, industialist, researcher, hunter pirate or mixture of them all.

Farmer hunters. The proper term for "macro miners", is farmer, because a majority of them I think, don't use macros. Just a real player mining for a living and selling his ISK to his boss for real world money.
