I just nabbed this game a few days ago after a friend bugged me to death to join. I came from World of Warcraft, where I quit due to lack of challenges. Joined EQ2 for PvP, only to realize that EQ2 players never PvPed before and thus too damn easy.
I come here to see corporations fall, setup tolls, and be a bounty hunter. I plan on getting a big ass ship, whereis when I enter battle, the big ship will fire at insane range while I listen to Star Wars music.
Now I don't mind starting at the bottom of the rung, that's kind of expected in every other game. And one thing that I really enjoy about this game is you can be offline and having a social life, come back later and actually progress. The only reason why you login is to make money.
Which brings me to my point, what is there to do in this game? I don't like mining in any other, including this one. Courier missions aren't since all you do is set a destination and wait. The pirates in 0.4 don't give a huge challenge, which is kind of sad since I only have a merlin (o scry) with a missing high slot. The agents are quite low on the difficulty scale, because I can use my merlin against ten pirates and they won't even destroy half of my shields when I'm done. And getting only 50k a mission isn't really profitable.
So can someone explain what there is to do? I've joined a corp but we won't be doing much since it's a new one. I plan on killing stuff, and I don't find it much of challenge unless I want to commit suicide. And no way am I going too deep into low sector terrority since they will be someone with a much large ship and more time then I do that will defeat me.

what you will find most rewarding is probably a mix of "careers" : mining, trading, mission running, pirating, anti-pirating, fleet battle pvp, etc. in general, anything you can think of that doesnt break the EULA, you can do if you have the brains and the guts.

Well this is against what you want to do, but if high sec is really so simple then go join a 0.0 corporation; that's really where the most fun (imho) is in the game. Although in 0.0 PvP you will generally be cannon fodder.

EvE is so open ended you can do what ever you dream up...from conquer the galaxy to hauling dog crap out of kusomonmon...
maybe ummm....first don't always think big ships are the key...cause they are not..sure it helps but i have witnessed many battleships fall to cruisers...
most of all, eve is not linear, thus could never be boring...such as WoW or any other linear class based MMO.
now .. i know players whom are notorius pirates, i know players whom run 200+ man strong corps and control space...I know players whom solo hunt player pirates and group hunt pirate players also..
I know huge manufacturing corps in EvE with some of the best shipyards in the galaxy...
I know mercenary pilots whom only crave ISK and Blood..and mercenary corps for hire to do the dirty work..
look on the map also...and see what the galaxy is doing...because if one thing is for sure..EvE is NOT boring for me...no other MMO could even come close to the level of creativity and open endedness that EvE has to always keep the game rolling and wide open for fun....

P.S. I am a player whom has been around since eve started practically...I am so NOT bored after 3 years

I did, I got bored because of little advancement, reward, and challenge.

Well the simlpe answer as to what you can do in this game is... well... anyting you want.
CCP doesn't impose rules on you, so pretty much any thing, no matter how evil is fair game. The down side is, CCP doesn't actually give you things to do. Or in other words, there's no quests or set of objectives you need to clear before advancing.
So the best way to really enjoy eve, is to make your own fun. I can understand not liking mining, or finding the agent missions to easy or dull. But there are litteraly thousands of other things you can do, aside from these things. For instance, as a noob I had a great time working the markets, finding lower priced stuff, buying it moving it to a hub system, and selling for a profit.
Best advice is, join a good existing corp, and ask what they do for fun.

Lots to do in EVE..but it is a bit deeper than other MMOs....if it isnt working for you and you dont want to go try some of the suggested things..or find them for yourself...pick up another game.

You can play markets and run trade through dangerous space for higher profits if adrenaline rushes are your thing.
Or try and find a complex to run that isn't a well-beaten path -- keep in mind that in EVE you're not going to want close fights too often, as this game does pack a pretty inconvenient penalty for losing.
Perhaps strike up a deal with a pirate corp to act as an empire scout/errand boy, then become a tackler once you're confident enough in your ability to set up a ship well and be able to replace it when it goes poof. (Because it WILL go poof.)
I'm just pulling ideas off the top of my head. The whole thing with this game that's a blessing in the long run, but absolute hell when you start is that there is no set path to follow. Every other game is life in a box next to the freedom of purpose that is EVE.

or
Join a pvp corp for new guys. Find a decent one and they'll provide you with low end ships and take you out ratting, shooting hostile noobs and assorted other things.
If you like combat then the latter should entertain you.
edit: ignore the smacktards too, you've come from wow though so you should be used to it.

make sure to get the connections skill to 3 or 4, that'll boost you up to level 2 missions, and that should provide at least a bit more of a challenge, if not a signifigant one. doing those for a while will get you to 3, then doing those will get you to level 4's.
level 4's have sometimes like a dozen cruisers a BS or two and a few frigs... all at once. those can be entertaining.
and what do you mean missing high slots? or whatever? what are you trying to put on it?
the game can be great, but you gotta play thoughtfully and weigh options and potentials and such. just throwing whatever on there won't always work.
the difference between some named guns and non-named might not seem like much, but a few points of CPU or PG or whatever can make a signifigant difference in some situations.

Also, just scratching my head here.............what POINT 4 system are YOU in that only has 5k rats? hmmmm? Methinks you're reading something wrong, because if you hop into a .4 system belt, it ain't gonna be JUST 5k rats.
Methinks you need to join a larger corp to get a better feel for how things ACTUALLY work in EVE before coming here wondering the same.

Welcome to Eve Marky X.
The first few months of the game are the most challanging as you will proberably invest most of your isk in skills.
Many corps will take noob members and help them with the basic skills, ships, weapons, mods etc but you got to help them back. Sadly for empire corps that could mean hauling. 
However now is also a good time to practise PVP and if you find a merc or another corp engaged in PVP then they always need good tacklers who can web/scram/jam others whilst the damage dealers inflict the damage. Your clones and ships will be cheap and if its 0.0 space and/or official war then no harm will be done to sec status. Having a bad sec status and little isk/skills is hard work, but can be done if you simply want to pirate.
Having a big ship is handy but as others have said, many a BS has fallen to a small cruiser/frig gang as big ships have difficulty hitting small fast ships.
The most important thing about Eve is having fun, so go have some fun and if you survive the first few months then you can kiss your life good bye 
If I started Eve again then I would have taken the PVP path, sadly I decided to mine/build stuff. ISK is OK but fun is lacking so I use it to fund a PVP account.

Tell that to GoonFleet... Speaking of GoonFleet, look them up in-game. They are mostly new players who go out to 0.0 en masse and swarm their enemies.
Also remember that bigger ships find it harder to hit smaller, faster ships. Frigates are also good for persuing and destroying haulers full of ore bound for empire.

IF the place you are in is too easy, go deeper... 0.4.. still got 4 secs to go and aftter that you still got the real PvP left
The good thing with being in a tiny rascal is that people mostly won't bother
